It was realized the sensorial evaluation and were studied the chemical composition and nutritional value of iron-fortified bread, with partial replacement of 10% of its wheat flour content by potato and corn flour, obtaining a bread with soft texture, palatable and very good acceptability for children of school age. The elaborated bread contains protein 13,10%; fat 9,80% and carbohydrates 50,32%, with an energy value of 341,88 kcal/100 g and an iron content 10,13 mg/100 g, that satisfies the recommended dietary allowance of iron for schoolchildren.

Los frutos sinami son una fuente interesante de recursos promisorios y pueden ser aprovechados para el desarrollo de alimentos funcionales y cosméticos. Los objetivos del presente estudio se centran en la evaluación de la composición proximal y cromática de la torta, perfil de ácidos grasos del aceite obtenido mediante los métodos Folch y Soxhlet y el contenido de polifenoles totales y actividad antioxidante del residuo después de la extracción con n-hexano y cloroformo/metanol. Sacha inchi oil (SIO) is one of the largest vegetable oil exports in Peru, used for consumption, in the food industry, cosmetics, and pharmaceuticals; it represents a significant economic income for producers. This study addresses the characterization and quantification of fatty acids, tocopherols, sterols, and alcohols of commercial Sacha inchi oils from Peru. Some of the SIO samples received had a high substance consistency, while others differed in the compounds studied. However, a simple route, without chemical activation reagents, is needed for the development of adsorbents. The aim of this study was to develop an adsorbent from plantain peel, using a simple procedure, and to evaluate its capacity to remove phosphate from aqueous solutions at phosphate concentrations similar to those of water sources at risk of eutrophication (0.30 mg/L). Generic drugs constitute the basis of pharmacological requests in health care systems in Latin American countries. Peru has enacted laws and regulations that require bioequivalence studies of high health risk drugs and exemptions, based on international legislation, to be conducted in research centers accredited by the authority of Health. There is a list of 19 drugs that must demonstrate their therapeutic equivalence through in vivo or in vitro studies, of which 13 have shown bioequivalence in vivo, and 8 of those have shown bioequivalence in vitro.
