In this study, the stability of the sensory quality and viable mesophilic aerobic (AMV) counts of llama ground meat with the addition of sanky (Corryocactus brevistylus subsp. puquiensis (Rauh & Backeberg) Ostolaza) peel ultrasound-assisted extract (CES) was evaluated during storage at 5°C , the added extract volume was calculated to obtain a concentration of 60 mg PT / kg of llama ground meat. The instrumental parameters of color (L*, a*, b*), pH, AMV and sensory properties were determined during nine days. The samples without extract (CO) presented higher values​​ of a* (redness) than the CES samples; however, the L* (luminosity) and b* (yellowness) values ​​did not show significant differences for the CES treatment during storage. The aim of this study was to perform a descriptive analysis to evaluate the sensory properties and color parameters in the llama burger with sanky peel powder. Sensorial characterization was performed using the static sensory analysis technique, quantitative descriptive analysis (QDA), which provides information on the intensities of the sensory properties at a specific point in time. The antioxidant capacity of the sanky peel was quantified (77,50 ± 0,98 µmol trolox equivalents/g dry weight), a panel of sensorial judges was trained, flavor, aroma, texture and appearance were evaluated, furthermore color, pH and microbiological parameters were evaluated. QDA revealed that the sanky peel powder in the llama burger improved the scores of the sensory properties: salty taste, sour taste, oregano flavor, firm appearance and general acceptability, however no significant difference among sens...

There are several investigations on the use of food waste to remove contaminants by adsorption. However, a simple route, without chemical activation reagents, is needed for the development of adsorbents. The aim of this study was to develop an adsorbent from plantain peel, using a simple procedure, and to evaluate its capacity to remove phosphate from aqueous solutions at phosphate concentrations similar to those of water sources at risk of eutrophication (0.30 mg/L). The simple pyrolysis method was used in an electric muffle, without chemical activation, using plantain peel as precursor. The variables evaluated were pyrolysis temperature and solution pH. Las infusiones son bebidas elaboradas a base de hierbas y otros materiales vegetales, consideradas saludables por la presencia de compuestos bioactivos. El objetivo del presente estudio fue evaluar la actividad antioxidante, compuestos fenólicos y evaluación sensorial de formulaciones para infusión a base de cáscara de sanky y canela. Los tratamientos estudiados incluyeron 100% de cáscara de sanky (INF100), 70% de cáscara de sanky +30% de canela (INF70) y 50% de cáscara de sanky +50% de canela (INF50). The objective of this research was to determinate the consumer response about the degree liking of a beverage in function to flavor and consistency. The beverage was elaborated with pineapple (Ananas comosus) pulp/quinoa (Chenopodium quinoa Willd), in ratio 7:1 (w:w), processed in three heat treatments TP01, TP02 and TP03 (85 ºC x 26 minutes , 90 ° C x 7 minutes and 95 ° C x 2 minutes). The ultrasound-assisted extraction allows to recover bioactive substances in the agroindustrial waste, besides, is a fast, clean and friendly with the environment technique. The extraction of total phenolic components by ultrasound was carried out on the peel of the fruit of the sanky (Corryocactus brevistylus). This plant is a cactus that grows in the Andes of Peru and its fruit is used by the communities. The sanky peel reported: humidity 10,74 %; protein 9,19 %; ashes 14,75 %; 2,68 % fat; fiber 16,39 % and nitrogen-free extract 46,25 %.
