The aim of this study was to characterize the PepT1 of pirarucu Arapaima gigas through genomic and proteomic tools. A transcriptomic and proteomic analysis was made from sections of the intestine, spleen, liver and kidney of fingerlings. The transcriptomic analysis allowed obtaining two consensus sequences of 357 and 459 bp. Both fragments showed a high degree of homology (78 and 80%), mainly with nucleotide sequences coding for the PepT1 of Scleropages formosus of the same Order as A. gigas. The proteomic analysis by double mass spectrometry MALDI TOF/TOF allowed to identify 15 peptide sequences of PepT1 in pirarucu. In conclusion, PepT1 was partially characterized in the intestine of pirarucu, which could be used for further studies on the evaluation of its expression.

The chame Dormitator latifrons is a symbolic species associated with rural aquaculture in coastal regions of the South American Pacific. Its adaptation to stay alive out of water (anhydrobiosis) for days is beneficial for its storage and transport at room temperature. The aim of the study was to determine the tolerance of chame to anhydrous conditions. Sixty chames were distributed in containers and kept in two climate-controlled environments at 16 and 24 °C for 96 h. Survival, malondialdehyde levels, total proteins and pH in the muscles and lactate dehydrogenase (LDH) activity in the gills were monitored. Additionally, the behaviour of the fish was monitored, as well as the total number of microorganisms with a sensory evaluation. The aim of this study was to evaluate the sedative effect of three products: valerian extract (Valeriana officinalis), benzocaine and tricaine methanesulfonate (MS-222) on stress levels produced by a simulated transport model in tilapia fingerlings. In a first part, the sedative dose of the products was determined based on the clinical characteristics that indicate depression of the central nervous system. In the second part, sedation and subsequent simulated transport for 3 hours were performed. The fish were euthanized, and blood samples were taken from the tail vein to determine cortisol (ELISA) and glucose (portable glucometer) levels, haematological parameters and mortality. El objetivo del estudio fue caracterizar el PepT1 del paiche Arapaima gigas mediante herramientas genómicas y proteómicas. Se realizó un análisis transcriptómico y proteómico a partir de secciones del intestino, bazo, hígado y riñón de alevines. El análisis transcriptómico permitió obtener dos secuencias consenso de 357 y 459 pb. Ambos fragmentos presentaron un alto grado de homología (78 y 80%), principalmente con secuencias de nucleótidos codificantes del PepT1 de Scleropages formosus del mismo Orden que el paiche. El análisis proteómico por espectrometría de doble masa MALDI TOF/TOF permitió identificar quince secuencias peptídicas del PepT1 en paiche. Como conclusión se logró caracterizar parcialmente el PepT1 en el intestino del paiche, las cuales podrán ser usadas para posteriores estudios sobre la evaluación de su expresión.

La pulpa de Myrciaria Dubia (camu camu) fue atomizado en secador spray a temperaturas de operación de 195 °C y 200 °C conjugando estas temperaturas con diferentes diámetros de orificio de salida del aspersor que son de 2.5 mm y 4 mm y empleando maltodextrina como agente encapsulante en las concentraciones de 8 %, 10 % y 12 %. En este estudio se diseñó e implementó una planta piloto automatizada para la producción de leche de Tarwi, con capacidad para procesar 10 kilogramos de grano desamargado por lote. El propósito principal fue modernizar y estandarizar las etapas de molienda, cocción y pasteurización, incorporando sistemas de instrumentación y control que aseguren la calidad y la inocuidad del producto final. El sistema integra un Controlador Lógico Programable (PLC Siemens S7-1200), sensores de temperatura PT100, resistencias tipo banda para el calentamiento y un intercambiador de calor de placas para el enfriamiento. La regulación térmica se realizó mediante un algoritmo PID en lazo cerrado, lo que permitió mantener una curva estable y alcanzar una pasteurización efectiva a 75 °C durante 15 minutos, reduciendo la presencia de patógenos y conservando el contenido proteico del producto. The Free Radical Theory of Aging posits that reactive oxygen species (ROS), produced both endogenously and via environmental exposures, induce cumulative molecular damage to lipids, proteins, and DNA impacting cellular and tissue integrity. This oxidative stress contributes to age-related degenerative diseases such as cancer and Alzheimer’s. The characteristics of a strain of Bacillus amyloliquefaciens isolated from the intestine of Arapaima gigas, selected for its ability to generate inhibition of multiple pathogenic bacteria of fishes were analyzed by using molecular tools such as PCR and mass spectrometry - MALDI TOF / TOFM. The results showed through PCR that this strain has key genes for the generation of antimicrobial peptides such as bmyB (bacillomycin L synthetase B), fenD (fengycin synthetase), srfAA (subunit 1 surfactin synthetase), bacA (bacilysin biosynthesis protein) and iturin (iturin A). The objective of the present study was to characterize alpaca rennet and evaluate its coagulating activity. Ready-to-use alpaca curds were collected directly from dairies in four neighborhoods of Viscapalca (Huancavelica-Perú, 4003 masl), which were transported under refrigeration and kept frozen at -20°C.
