The objective of this study was to evaluate the elaboration of a salami that contains a natural colorant extracted from the seeds of ayrampo (Opuntia soehrensii), using an extract of this natural product at different concentration levels and using microbiological and sensorial characteristics as acceptance criteria of the final product. Initially, a physicochemical characterization of the seeds was carried out, which showed the high nutritional value of this natural product and its antioxidant power. In an experiment aimed at determining the effect of the concentration of the ayrampo seed extract on the quality of salami, it was shown that for extract concentrations between 150 and 250 g / L of water in the meat mass, there are no significant differences in terms of the characteristics of smell, color, taste and appearance of the final product. Parallel parking, in general, is a moderate difficulty maneuver. Moreover, for inexperienced drivers, it can be a stressful situation that can lead to errors such as stay far from the sidewalk or damage another vehicle resulting in traffic tickets that range from simple parking violation to crash-related violations. In this work, we propose a computationally effective approach to perform a collisionfree parallel parking. The method will calculate the minimum parking space needed and then the efficient path for the parallel parking. This method is computationally inexpensive in comparison with the current state of the art. Information and communication technologies are helping to improve experiences in many areas, such as engineering, simulation, education. It is in the area of education, that thanks to the help of hardware and software, are allowing to improve the educational experiences, in the present work, we resort to the use of the Virtual Reality glasses of the Oculus Gest 2 model, with the Spatial application, applied to the learning of music. We present the architecture of the solution so that it can be replicated and scaled to other courses and subjects of study, we present how to configure each of the tools as well as the alternatives that can be worked in order to optimize resources, as a result we present the advantages and disadvantages of using Virtual Reality technology and recommendations to optimize its application so that it can be replicated and scaled to other applications.

Flavor is one of the most prominent characteristics of chocolate and is crucial in determining the price the consumer is willing to pay. At present, two types of cocoa beans have been characterized according to their flavor and aroma profile, i.e., (1) the bulk (or ordinary) and (2) the fine flavor cocoa (FFC). The FFC has been distinguished from bulk cocoa for having a great variety of flavors. Aiming to differentiate the FFC bean origin of Peruvian chocolate, an analytical methodology using gas chromatography coupled to mass spectrometry (GC-MS) was developed. Depression is a major public health problem that affects a significant proportion of young adults, such as college students. A process-based approach has been proposed for its study, which seeks to identify transdiagnostic psychological variables that can be the target of change in psychotherapeutic interventions. The purpose of this paper was to analyze the interrelation between a set of process variables (cognitive fusion, rumination, and experiential avoidance), as well as to examine the relationship between each of these variables and depression in 368 college students aged 18–29 years (M = 21.35, SD = 2.36, 77.7% female). The purpose of this work is to provide information on cost improvements in SMEs in the brewing sector using lean manufacturing and BPM. A simulation model was created using Arena and Bizagi, where the model was made with the provision of a small brewing company, the indicators used to measure the effectiveness of the model are: distribution cost per bottle, percentage of use of containers, lead time and OTIF, these indicators seek to provide us with the necessary data to validate the process. This document shows us a more complete vision of the use of these tools and the result of their use. The case study is a company that produces and sells plastic containers. Through a production time assessment, the low availability of injection machines was identified as the mam problem. The availability rate for these machines was set at 80.19%, which represented a relevant issue since the worldwide standard is 90%. These low availability rates are mainly due to machine breakdowns, representing 9.87% in lost revenue for the company. To improve machine availability, this study proposed an improvement model combining Lean Manufacturing tools with Kaizen, which refers to continuous process improvement. This work proposes an electronic equipment which determines the marbling grade in beef rib eye according to the American grading scale using digital image processing and machine learning, achieving an 88.89 % coincidence level with grading done by beef specialists. Existing solutions which use image processing usually require calibration methods due to working in non-controlled environments. Globally, a large amount of agri-food waste is generated as a result of industrial processes or direct consumption of raw materials, and when discarded, they represent a factor of environmental pollution. Mango by-products have a great bioactive potential, especially because they contain phenolic compounds in which mangiferin predominates, in addition to a great variety of phenolic acids, flavonoids and tannins, which confer antioxidant effects against cancer, cardiovascular and neurological diseases, among others.
