In the present study were evaluated the bioactive compounds and antioxidant activity and satisfaction degree of a drink made with purple corn and stevia. Were used HPLC, ABTS, ORAC, DPPH methods and was done comparison according to the hedonic scale. Results showed close phenolic compounds to 2 mg/mL, high in anthocyanins (50,84 mg/100 mL) and antioxidant activity with ABTS (TEAC 17,96 pmol/mL), ORAC (31,01 μmol TEAC/mL) and DPPH (GAE 0,706 mg/mL). The useful life assessment revealed a synergistic effect between the purple corn anthocyanins and the active components of stevia. The satisfaction degree revealed that the formulation was described between "really like " (19%) and "like slightly " (33%) according to the hedonic scale about attributes of color, smell, taste and overall acceptability.

En la presente investigación se evaluaron los compuestos bioactivos, y se determinaron la actividad antioxidante y el grado de satisfacción de una bebida de maíz morado y estevia, mediante los métodos por HPLC, ABTS, ORAC, DPPH y por comparación según la escala hedónica. Los resultados mostraron compuestos fenólicos cercanos a 2 mg/mL, altos contenidos de antocianinas (50,84 mg/100 mL) y actividad antioxidante según ABTS (17,96 μmol TEAC/mL), ORAC (31,01 μmol TEAC/mL) y DPPH (0,706 GAE mg/mL). La evaluación de vida útil reveló un efecto sinérgico entre las antocianinas del maíz morado y los componentes activos de la estevia. El grado de satisfacción reveló que el formulado se califica entre “me gusta mucho” (19%) y “me gusta ligeramente” (33%) según escala hedónica sobre los atributos de color, olor, sabor y aceptabilidad en general.

The species was collected in the district of Baños del Inca City of Cajamarca, department of Cajamarca to 2776 meters. The phytochemical march revealed the presence of tannins, flavonoids, alkaloids and saponins in the alcoholic extract. The purpose of the present investigation has been to observe the effect of the lipidic fractions of Leoidium meyenii Walpers, «maca» on the reproductive organs of female mice, following the method adapted by S. Garg et al (1998) The yellow maca from central andean rcgion (Puna, Junín) was used. Initially we obtained the hexanic and ethanolic éxtracts by means of saponification of the first one, fatty acids and total sterols were separated. Lipidic fractions, which were oraily administered to four groups of female mice in dosis of 200 and 100 mg/kg respectively for a period of 16 days, maintaining the control group. In the present investigation we have studied some fungae which produce Mycotoxins. The samples were obtained from markets in the city of Lima during the summer, autumn and spring of 1999. The method used was the expositión of the samples in agar-potatoe-dextrose and cloranfenical media. We were able to isolate eleven varieties of fungae which produce mycotoxins such as Penicillium, Aspergillus Fusarium, Altemaria, Cephalosporium, Cladosporium, Paecylomices, Phytomices, Stachybotris, Trichoderma, Trichotecium (Fig. 1,2, 3). Were studied the antioxidant effect and toxicity of the hot springs of San Antonio de Putina-Puno. Were used methods of lipid antiperoxidation, malondialdehyde (expressed as TBARS), in vivo oral acute toxicity at fixed dose according to 423 OECD and the physical chemistry composition by inductively coupled plasma source mass spectrometry (ICP-MS). The antioxidant effect presented significant difference between control group (0,0527 ŋm) and the study group (0,0390 ŋm) and malondialdehyde (p<0,05) and in vivo oral acute toxicity at fixed-dose treatment. Not evident signs of intoxication, moreover, in the composition of these hot springs were found: chloride 71,9%, sodium 80,3 % and sulphate 22,7% meq. Was concluded that the thermal mineral hot springs, are not toxic, have antioxidant effect and are chlorinated, sulphate and sodium type.

Objetives: To determine the gastroprotector effect of Copaifera officinalis oil using indomethacin and pyloric ligature in rats. Design: Preclinical study.
