The leaching of valuable metals from mineral ores is the basis of several extractive economies around the world, but the strategies employed often need to rely on dangerous compounds such as cyanides. Due to the complex nature of most ores, leaching processes are slow and have a low efficiency in noble metal extraction, which is usually improved by fine-milling the mineral. In this manuscript, we consider this strategy, demonstrating that it may increase the amount of silver leaching, but at the expense of a higher consumption of cyanide, which renders the process inefficient (only 2% of consumed cyanide is employed to complex silver). The increase in the yield of the desired product without the smarter use of dangerous compounds is shown as a paradigm of the need to insert green chemistry principles in industrial processes. We further present the result of two potential strategies for g...

Globally, a large amount of agri-food waste is generated as a result of industrial processes or direct consumption of raw materials, and when discarded, they represent a factor of environmental pollution. Mango by-products have a great bioactive potential, especially because they contain phenolic compounds in which mangiferin predominates, in addition to a great variety of phenolic acids, flavonoids and tannins, which confer antioxidant effects against cancer, cardiovascular and neurological diseases, among others. In addition, it was demonstrated that they have an effect against a broad microbial spectrum, including multiple pathogenic bacteria and fungi such as Escherichia coli and Candida albicans, respectively. According to the literature, mango peel and seed extracts also have potential as an additive, by influencing the sensory and physicochemical characteristics of foods, which ha...

The presence of ochratoxin A (OTA), a mycotoxin with carcinogenic properties, was analyzed in the beans of Theobroma cacao L. "trinitario cacao" from the collection center of Pisana-Tingo Maria, of the San Martin Region, Peru. The samples were collected in four stages of production: harvesting, fermentation, drying and storage. The OTA was extracted using 60 % acetonitrile and purified by immunoaffinity columns and subsequent quantification by high performance liquid chromatography (HPLC). The recovery percentage of the method used was evaluated by using samples fortified with OTA, showing a recovery percentage greater than 95 %. The beans evaluated in the different stages of production did not show the presence of ochratoxin A and in the mycotoxigenic analysis the presence of fungi of the genus Fusarium, Penicillium and yeasts was evidenced.

The global consumption of coffee has experienced a notable increase in the last decade. The high global consumption of coffee is mainly attributed to its psycho-stimulant effects, influenced by genetic factors, and the perceived health benefits, although adverse effects are also recognized in some individuals. The complex chemistry of coffee, influenced by the bean, roasting, and preparation, impacts its flavor and properties. This article explores the chemistry of coffee, from the Arabica and Robusta species and their origin, to the processing methods (wet/dry) that modify the green bean. Transformations during roasting (Maillard reaction) are analyzed, as well as how roasting and extraction affect compounds like diterpenes and caffeine, and the sensory characteristics of coffee. Finally, the use of chemical techniques to determine the origin and purity of coffee is highlighted, undersc...
