A cross-sectional epidemiological investigation was carried out to determine the risk factors associated with the dissemination of brucellosis to humans in milk processing centres and slaughterhouses in seven cantons of the province of Manabí, Ecuador, between September and November 2015. A census was conducted to quantify farms processing milk, milk processing centres and slaughterhouses. A total of 119 dairy farms, seven slaughterhouses and seven milk processing centres were selected. They were characterized in terms of the types of products produced and on the presence of risk factors as causes of brucellosis in humans. El presente artículo pretende dar a conocer las dificultades en los procesamientos químicos de productos lácteos en la experiencia del proyecto “Desarrollo de capacidades para el mejoramiento de la competitividad de las cadenas productivas de lácteos en la provincia de Huaytará”, en el departamento de Huancavelica. Este proyecto se trabajó con las comunidades de las zonas altoandinas, quienes contaban con insumos artesanales, careciendo de técnicas adecuadas e higiene en el tratamiento de la leche. The document presents the results of the evaluation of the classification process of milk samples through the modeling of machine learning techniques. The objective of this research was to discriminate the presence or absence of adulterants, which allowed obtaining adequate damages for human consumption. Also, speed up and specify the inspection process of said samples. The relevance of this study can be understood from the product under analysis: milk. This is for mass consumption, especially among children. Due to the above, it is considered relevant to efficiently demonstrate that quality products are provided to the population and this document is a contribution to the reliability of the integrity of dairy products.

El presente trabajo de investigación busca contribuir en la diversificación del uso de Sacha Inchi, una planta nativa de la Amazonía con alto valor nutricional y como alimento funcional por su aporte ácidos grasos esenciales como la omegas 3 y 6, que ayudan a disminuir el colesterol malo y su beneficio para mantener un sistema cardiovascular saludable. The aim of this work was to evaluate the efficacy of pasteurization and freezing on the inactivation of the bovine leukosis virus present in milk. A bioassay was carried out using 16 sheep. The animals received an intraperitoneal leukocytes inoculum from cow milk with cells infected with bovine leukosis virus (BVL) previously treated with one of the virus inactivation methods. Four study groups were evaluated: a) control group: milk without prior treatment, b) pasteurization group: milk treated by pasteurization, c) 12-hour freezing group: milk treated by freezing for 12 hours, d) 36-hour freezing group: milk treated by freezing for 36 hours. The objective of this applied experimental research was to evaluate the microbial stabilization of pre-sonicated fresh milk by low temperature thermal treatment (≤60 °C), to reduce its perishability. Fresh milk was sonicated with an energy density of 0.5 kJ/mL before being thermally treated at low temperature (40 to 60 °C) for different times; The pre-sonicated and thermally treated milk was evaluated for its content of Total Mesophilic Aerobes (AMV) and Total Coliforms (TC), and the effect of the treatment on microbial populations was modeled using the Bigelow Model. For the elaboration of the BMN, agro-industrial residues from the processing of rice (rice polishing) and coconut (cake) were used. Este trabajo aborda la mejora de la eficiencia en la recepción de leche en una pequeña empresa de productos lácteos mediante estrategias de ingeniería de calidad y estandarización de procesos. El problema principal identificado fue la entrada de leche defectuosa, afectando negativamente la eficiencia y calidad del producto final. Para solucionar este problema, se implementaron tres herramientas clave: mapeo de procesos, control estadístico de procesos (CEP) y estandarización de procedimientos. Se realizó una investigación epidemiológica transversal para determinar los factores de riesgo asociados a la diseminación de brucelosis a los humanos en centro procesadores de leche y mataderos de siete cantones de la provincia Manabí, Ecuador, entre septiembre y noviembre de 2015. El objetivo del presente estudio fue determinar la prevalencia del virus de la diarrea viral bovina (VDVB) y de animales persistentemente infectados (PI) en bovinos productores de leche en la Irrigación de Majes, Arequipa. En la primera fase del estudio, se colectaron 204 muestras de leche de tanque (una por hato) en la planta local de procesamiento de leche, para la detección de anticuerpos contra el VDVB mediante la prueba de ELISA indirecta. The objective of this study was to determine the prevalence of bovine viral diarrhoea virus (BVDV) and persistently infected (PI) animals in dairy herds located in Majes, Arequipa, Peru. In the first phase, 204 bulk tank milk samples from to 204 herds were collected al the local commercial processing plant in Majes for detection of antibodies against BVDV by indirect ELISA test. In the second phase, 286 blood samples were collected from 57 strong positive (Optical Density [OD] ? 0.900) herds for the detection of antibodies against BVDV and in PI animals by the indirect and capture ELISAs respectively. In the third phase, blood samples were collected from all animals ranging from 6 to 24 months of age from three herds that had at least one PI animal. The aim of this study was to demonstrate, by flow cytometry, that the percentage of alpaca spermatozoa with high mitochondrial membrane potential (MMP) is significantly reduced after the cryopreservation process. Forty-one alpaca testicles were obtained from a local slaughterhouse in the Ninacaca district, Pasco, Peru. The spermatozoa were recovered from the tail of the epididymis with an extender based on skim milk and only those samples with minimum 30% motility and 50x106 spermatozoa/ml were cryopreserved. The MMP evaluation was carried out before and after the cryopreservation process. The effect of Guarania genre music on productive performance and animal well- being (milk production and serum cortisol) was evaluated. In total, 17 animals of various breeds and in different stages of lactation were used, with a crossover design, where each animal received both treatments in each period (inclusion and non-inclusion of music in the milking process). Each period was two weeks. Daily controls of milk production were carried out (two milkings per day) and blood samples were obtained weekly to determine serum cortisol concentrations. The average milk production of the group of cows without music application was 19.7 L/day and in the group of cows with music application it was 20.4 L (p=0.008). 96% of cortisol concentrations had a level less than 1 µg/dl, considered within the reference range, and without significant difference between treatments.
