El presente trabajo de investigación fue realizado en tres provincias de la región Junín, con cuatro empresas acopiadoras de leche y 20 ganaderos con 208 vacas, con una producción media de 10 litros/animal/día. Los objetivos fueron identificar las labores de manejo de ordeño, el sistema de ordeño y su influencia en la calidad composicional, higiénica y microbiológica de la leche; verificar diferencias en la composición y calidad de la leche acopiada (acopio interno y acopio externo); estudiar el efecto del deterioro de la leche por el tiempo de almacenaje y la propuesta de una metodología de buenas prácticas ganaderas. Se utilizó el modelo estadístico lineal para un factor, en la comparación entre grupos y pruebas no paramétricas de acuerdo al número de grupos a comparar (pruebas Kruskal-Wallis y Mann-Whitney). The effect of multinutritional blocks (BMN) based on agro-industrial residues on the production and composition of bovine milk in a tropical region of Peru was evaluated. For the elaboration of the BMN, agro-industrial residues from the processing of rice (rice polishing) and coconut (cake) were used. Twelve native cows were used to graze in paddocks with Brachiaria brizantha distributed in two groups (A and B) of six animals during two periods of 21 days each. Two treatments were established: T0 (grazing without supplementation) and T1 (grazing plus supplementation with BMN). During the first period, group A received T1 and group B received T0, while in the second period the reverse was done.
