In the present study, the stabilization of horse manure (mixture of rice husk, manure and horse urine) was evaluated through an aerobic process similar to composting. The stabilization process was evaluated in two piles of horse manure for 16 weeks, taking samples every week. A decrease in temperature from 66,7 to 41,0 °C, the reduction of the density from 394,0 to 370,4 kg/m3, the reduction of the water retention capacity from 220,7 to 125,6% and the reduction of the respiratory activity of 9.8 to less than 2 mgO2/g ms/d, were indicators of the stabilization of the horse manure, the easily degradable material of manure and urine were removed by aerobic degradation and washed with irrigation, leaving only the rice husk with a minimum fraction of other materials. Since the first publications on the study of microorganisms in composting, the progress has been impressive, because microbiological and molecular biological methods have been used to identify the structure of microbial communities during the process. The interaction of physico-chemical parameters and the type of composting system determine variations in the diversity and abundance of microbial species. The metabolic activity of mainly bacteria and fungi allows the degradation of organic matter and contributes to the maturation of compost, the main product of aerobic composting. In the oxidation ponds, there is an alarming accumulation of sedimentable organic matter, despite the absence of direct tributaries. Although the presence of potentially contaminating elements is suspected, their origin and repercussions still require clarifi cation. It is necessary to determine the organic matter to assess the value of sedimentat ion in this context. The squid (Dosidicus gigas) is a cephalopod mollusk, a source of high quality proteins that is currently underexploited. The objective was to develop the methodology for the elaboration of a pre-cooked pota product, to evaluate the digestibility of the proteins and the shelf life of the product. Methodology: In a descriptive and experimental design, the nutritional technological study was carried out. Two samples of squid each consisting of 5 kg of the mantle, acquired at the Callao Fishing Terminal, were processed and analyzed independently. The processing parameters that maximize the pulp yield and the stability of the ungurahui nectar were evaluated by means of the Taguchi and Response Surface methodologies. The raw material used came from the town of Yurimaguas, Loreto Region - Peru, and was subjected to weighing, selection, classification, washing, disinfecting, maturing, pulping, refining, filtering, standardized (to formulate the nectar), pasteurized, packed, cooled and stored processes. El matadero Municipal de Pacora brinda sus instalaciones a matarifes locales para realizar el servicio de faenado con la finalidad de abastecer de carne de ganado vacuno, porcino, caprino el mercado local, actualmente el matadero no cuenta con las condiciones adecuadas debido a que no se cumple con el 35,29% de los requisitos generales y el 60% de los requisitos de diseño del decreto supremo DS 015- 2012-AG, afectando así la inocuidad de la carne obtenida. La pancreatina, sustancia conformada por la mezcla de enzimas digestivas, con aplicaciones en el campo médico-farmaceútico, por su origen y método de producción requiere ser sometida a un proceso de descontaminación. Así, muestras de pancreatina en polvo fueron empacadas en bolsas de polietileno de baja densidad y tratadas con radiación gamma a las dosis de 2, 3, 5, 6, 7, 8, 13 y 25 kGy. Se realizaron las pruebas microbiológicas y físico-químicas, indicadas en la US Pharmacopea, a las muestras irradiadas y control, para determinar la dosis óptima de descontaminación que permitiría el uso comercial del producto. Iron is a fundamental element for life, being essential in vital processes such as oxygen transport, electron transfer, enzymatic reactions, aerobic metabolism, photosynthesis or nitrogen fixation. Given the relevance of this element in metabolic routes central to life development, it is unsurprising that a great number of pathologies are linked to iron metabolism problems. Iron pathological species that appear in the frame of some diseases are nanometric materials, whose characterization presents huge difficulties. Detailed knowledge of these species may have great relevance in different problems such as the improvement of malaria diagnostic techniques or the treatment of neurodegenerative diseases.

El objetivo del trabajo fue evaluar la presencia de metales pesados (arsénico, cadmio, mercurio y plomo), Salmonella, E. coli, así como el recuento de mesófilos, hongos y levaduras y el recuento de Clostridium sulfito reductor en concentrados destinados para la alimentación de cerdos de cuatro regiones de Colombia. Se recolectaron 38 muestras de concentrados de 19 granjas para el análisis de metales pesados. Las muestras se procesaron por triplicado y se analizaron mediante espectrometría de absorción atómica acoplada a plasma. Para el análisis microbiológico se procesaron 391 muestras de 22 granjas. La investigación evaluó el comportamiento de la carga orgánica del superficial de un reactor de biopelícula de lecho móvil (MBBR) a escala real para el tratamiento de las aguas residuales de una industria de soluciones parenterales determinando que la variación de la carga orgánica del superficial removida (SARR) está relacionada con la carga orgánica del superficial aplicada (SALR) existiendo una correlación muy fuerte entre ambas variables.
