In this work dehydration of paprika(Capsicum annum L.) in solar and cabinet was compared, 276 and 353 ASTA color respective1y was obtained. Therefore the high ASTA color is produced, when dehydration is carried out in cabínet dryer.

In this work oleorresin of páprika (Capsicum annum L.), was obtained, using a Pilot Extraction Unit. As a resoult viscous and oily oleorresin was produce with a 1980 ASTA color , considered satisfactory in the market.

This work describes how to obtain honey from yacón (Polimnia sonchifolia) in Pilot Plant. Also we determined that the content of inulin in the proccesed honey is 25.4%.

This work describes a technologycal process to obtain alcohol from rice bran.The optimum time of fermentation was 12 hours with a yield production of 57% based on starch contents in the rice bran.

En el presente trabajo se describe el proceso tecnológico seguido para obtener alcohol a partir del polvillo de arroz. El tiempo óptimo de fermentación fue de 12 horas y el rendimiento de producción de alcohol de 57% basado en el contenido de almidón de la materia prima.

This work was carried out with the purpose to optimize physical chemical parameters obtain a microbial biomass from Kluyveromyces marxianus NRRL –Y-1109 y Candida pseudotropicalis BT-UNMSM_6 . The yeasts were grown on sweet whey crude and deproteinized, supplemented with nitrogen and vitamins sources. The optimization of fermentation parameters was obtained applying a Taguchi´s factorial design. It was established as optimal conditions: An pH 4.5; Temperature 30 °C and an aeration rate of 1.475 VVM; Agitation speed 600 RPM, Lactose concentration 5 g/L; (NH4)2S04 6 g/L; Yeast extract 1.5 g/L .
