There is a growing concern in environmental pollution levels of the neighboring ecosystems fruit processing plant by the discharge of untreated industrial effl uents and proper control of the authorities, because many of them have not considered the management their effl uents into the design of the plant. The objective of this research is to characterize and manage the processing effl uent. We conclude that the processing effl uents have a high potential for contamination by the abundant organic load and that have achieved the primary treatment of this potential reduction to acceptable limits by Peruvian law (98.1% turbidity removal and reduction of BOD Oxygen 96.58%), allowing the reduction of water consumption, release of hardship and its incorporation as a business friendly environment for approval of environmental authorities and the community as a whole.

The aim of the study is the principal parameters establish or to determine for the production of flour of eggplant of excellent quality, depending on the temperature, time of dried and size of the particles of flour, which finally define the performance of the process. One used fruits in his ideal condition of maturity organoléptica, for preventing it from oxidizing for action of the enzimas, there was in use a solution of 80 parts for million (ppm) of metabisulfito of potassium. The temperature of dried was of 65°C during 16h, which was carried out in a dryer of trays of stainless steel, with control of temperature and time. (Dryer of 20 trays of 50 X 40 cm c/u). For the grinding there was used a molino of hammer of stainless steel of 10kg/h, the flour being obtained by size of minor particle of 0.5 mm.

La degradación de los bosques tropicales afecta el sustento de las comunidades reduciendo la disponibilidad de recursos. Sin embargo, los factores causantes de degradación y el impacto que ésta ejerce sobre las comunidades permanecen poco entendidos. En la Amazonía Peruana, los frutos de la palmera Mauritia flexuosa son un importante recurso, no obstante, el aprovechamiento se realiza típicamente talando las palmeras en fructificación. M. flexuosa presenta individuos masculinos y femeninos, y la proporción de palmeras femeninas (PPF) en el bosque fue usado como indicador del nivel de degradación. Data colectada en 70 sitios, seis cuencas hidrográficas y 27 comunidades, mostró que la PPF varió ampliamente (0.03-0.52). Cocoa in grain is a tropical fruit considered as a heritage in Ecuador and constitutes 60% of the premium quality in chocolates worldwide, has sensory characteristics unmatched by other producing countries. Manual drying and selection activities contain many occupational hazards, affecting the safety and well-being of the people involved in these tasks, with the ergonomic risk of an intolerable level requiring immediate intervention. This research provides safe automated mechanisms for operations through internationally validated methodologies, without affecting the sensory characteristics.

Given the importance of the Chilean dried-fruit market and the characteristics of the industrial process of dehydration, it becomes imperative for companies to measure the efficiency of their production processes in order to identify critical areas and take the necessary actions to improve them. Hence, the present work performs an efficiency analysis for the production of dried apples in a plant of the Maule region, Chile. The methodology used is Data Envelopment Analysis, considering both discretionary and non-discretionary variables. At present, in the markets the process of determining the state of maturity of fruits is carried out by employees using only their criteria, since this method is very broad and tedious when carried out, for this the present investigation was developed, in improving the process of determining the state of maturity of fruits. Fruit processing generates large amounts of by-products (BPs) that play a key role in the economic, social and environmental crisis. Although these residues are not usually used, they have better nutritional and bioactive value than the edible part. Considering that the circular economy is a sustainable approach to promote a zero waste processing system, the objective of this study was to use bibliometric analysis and data mining to provide a body of knowledge on trends in the field of research on fruit BPs under circular economy strategies. Sweetener type can influence sensory properties and consumer’s acceptance and preference for low-calorie products. An ideal sweetener does not exist, and each sweetener must be used in situations to which it is best suited. Aspartame and sucralose can be good substitutes for sucrose in passion fruit juice. Despite the interest in artificial sweeteners, little is known about how artificial sweeteners are processed in the human brain. Here, we applied the convolutional neural network (CNN) to evaluate brain signals of 11 healthy subjects when they tasted passion fruit juice equivalently sweetened with sucrose (9.4 g/100 g), sucralose (0.01593 g/100 g), or aspartame (0.05477 g/100 g).
