This article shows the results of the comparison of using a non-continuous system technology and a continuous system technology in terms of the quality obtained in both processes. The non-continuous system technology produces second class quinoa with a yield of 86 %, and the continuous system technology produces first class quinoa with a yield of 96 %, which represents a significant difference between both systems.

The research aims to formulate a food mixture based on quinoa, cañihua, barley, corn, beans and soy using cooking-extrusion technology. The optimal mixture was made with formulations of better chemical computation, the mixture containing 28.8% pearl quinoa, 9.25% cañihua, 5.00% barley, 6.00% bean, 3.00% corn, 8.00% soybeans, 29.50% being favored of sugar, 8.00% of vegetable oil, 0.20% of essence, 2.00% of tricalcium phosphate and 0.25% of vitamins. Optimization of the steam quinoa cooking process was carried out, using a response surface design (RSM) 3-level: 3k factorial, and the multiple response optimization methodology of the desirability function (Dx) was used to find the optimal region, which are improved tools to optimize the variables of a process, evaluate the maximization of the water absorption index (WAI), water solubility index (WSI), degree of gelatinization (GE) and the minimization of cotyledon detachment (DC) of quinoa (Chenopodium quinoa Willd). The objective of this study was to conduct agricultural zoning of climate risk for quinoa cultivation. Data from 38 meteorological stations of the National Meteorology and Hydrology Service in Puno region were used. The zoning was based on the development of the water balance model, applying the water requirement satisfaction index (ISNA), for two levels of soil available water capacity (115 mm/m and 145 mm/m). Spatial analysis of the ETr/ETm ratio, obtained from the SARRAZON model, was carried out for each phenological stage through frequency analysis of ISNA values. The objective of this research was to determinate the consumer response about the degree liking of a beverage in function to flavor and consistency. The beverage was elaborated with pineapple (Ananas comosus) pulp/quinoa (Chenopodium quinoa Willd), in ratio 7:1 (w:w), processed in three heat treatments TP01, TP02 and TP03 (85 ºC x 26 minutes , 90 ° C x 7 minutes and 95 ° C x 2 minutes). The objective of this study was to assess the effects of saponins derived from Chenopodium quinoa by-products on methane (CH4) production in a ruminal fermentation system under in vitro conditions. Additionally, the study included the analysis of short-chain fatty acids (SCFAs) and true dry matter digestibility (TDMD). The saponin extracts obtained from three quinoa varieties were Altiplano (AS), Quillahuaman (QS), and Salcedo (SS), and were tested at six different doses (0, 0.2, 0.4, 0.6, 0.8, and 1.0mg/mL) each. Se Teniendo en cuenta que un producto, como la “quinua” es lo suficientemente nutritivo y digerible; es necesario que tenga un grado de hidrólisis que permita solubilizar la proteína, almidón, fibras, etc. cambiando sus propiedades organolépticas para hacerlo más aceptable y aprovechable.
