This research is based on the need to develop a new production line for fruit ice cream. Currently, tamarind in the national market can be found in products such as marcianos, cremoladas, ingredients in the kitchen, jellies or as fruit. The proposal of the work is innovative, since it raises the possibility of taking advantage of the pulp of the fruit in ice cream as an industrial input, due to the high concentration of tartaric acid found in the pulp. For ice cream, hydrocolloids (guar gum and xanthan gum) are used to provide a typical texture of fruit ice cream with milk, in addition to being enriched with ascorbic acid as a source of vitamin C. Three ice cream formulations were made that in its last stage mixing and freezing processes were assembled at an industrial artisanal ice cream plant to have better sensory characteristics. Each department of Peru is characterized by offering a variety of regional dishes, desserts and drinks. Among these products are artisan ice creams based on milk cream and water, which must maintain a sanitary quality to prevent any foodborne disease, being prepared under good manufacturing practices and marketed according to general principles of hygiene. The authors evaluate the best alternatives to offer eggfruit in foreign markets, by stressing the fruit’s advantages and looking for an appropriate by-product attractive for exportation. Their evaluation is based on a research on eggfruit, its types, characteristics, uses, growing in Peru and industrialization methods, and also on statistical data collection, and production and exports projections. Italy was found to be the most appropriate destination, because of its traditional ice cream market, where freeze-dried eggfruit powder can be used as main fl avoring input. Taking these fi ndings into account, the authors propose a 10-year business plan which includes a strategic proposal for installation and business growth, both at the production integration level and the product development level. Whipping times of the ice cream flavors and product offerings that represent 80% of sales, which are Cubetas retornables (returnable buckets, CR), Cubetas transparentes Perú (Peru transparent buckets, CTP) and Litro (liter, L), were analyzed in order to identify bottlenecks and develop strategies to reduce production times. Objetivo: evaluar el efecto cicatrizante de una crema tópica formulada con extractos alcohólicos de hojas de Perezia multiflora (escorzonera) y semillas de Vitis vinífera L. (uva) en ratas Rattus norvegicus Holtzman, comparándolo con la crema comercial Bepanthen. Métodos: se diseñó un experimento con siete grupos, utilizando concentraciones de crema del 15%, 20% y 30%. Los extractos se obtuvieron por maceración en etanol al 96%, y la cicatrización se evaluó mediante la medición de la resistencia tensil de la herida y regeneración tisular. Resultados: la crema al 30% tuvo el mayor efecto cicatrizante, significativamente superior a concentraciones menores y al placebo, pero similar a Bepanthen.
