La pitajaya (Selenicereus megalanthus) es una fruta exótica que se encuentra en las selvas amazónicas, en el caso de Perú, se encuentra con mayor frecuencia en la selva alta. Se caracteriza por tener alto contenido de vitamina C y antioxidantes, lo que la hace apetecible de ser comercializada. Respecto a su procesamiento, este debe ser realizado cerca a la fuente de materias primas, para reducir los costos que se generen. Por el tipo de fruta, no cabe duda que ya procesado puede ser considerado una oportunidad para los pueblos amazónicos eleven su nivel de vida comercializando la pitajaya.

The aim of the study is the principal parameters establish or to determine for the production of flour of eggplant of excellent quality, depending on the temperature, time of dried and size of the particles of flour, which finally define the performance of the process. One used fruits in his ideal condition of maturity organoléptica, for preventing it from oxidizing for action of the enzimas, there was in use a solution of 80 parts for million (ppm) of metabisulfito of potassium. The temperature of dried was of 65°C during 16h, which was carried out in a dryer of trays of stainless steel, with control of temperature and time. (Dryer of 20 trays of 50 X 40 cm c/u). For the grinding there was used a molino of hammer of stainless steel of 10kg/h, the flour being obtained by size of minor particle of 0.5 mm.

The application of edible coatings obtainable from alternative biodegradable materials has gained attention as a promising treatment to prolong the shelf-life of fresh-cut vegetables. Thus, this work aimed to develop a biodegradable coating based on fruit and vegetable residues flour. Immersion coating strategy was studied on the quality of minimally fresh-cut carrots during refrigeration storage by means of weight loss, color variation, pH, titratable acidity and soluble solids content. Better performance was obtained for coated carrots, which exhibited a tendency to have lower whiteness index than uncoated counterparts and enhanced overall quality. Fructooligosaccharides (FOS) are fructose polymers, linked by β-glucosidic bonds (2-1), considered low caloric food sweeteners with prebiotic function and can be obtained from sucrose by biosynthesis. The fruits of the carob tree (Prosopis pallida) contain mainly carbohydrates where sucrose stands out. For this reason, the production of FOS from carob extract was optimized using a pectinase from A. aculeatus. The response surface methodology using was applied to optimize the parameters that affected production: time, temperature and carob extract; then they were verified experimentally. There is a growing concern in environmental pollution levels of the neighboring ecosystems fruit processing plant by the discharge of untreated industrial effl uents and proper control of the authorities, because many of them have not considered the management their effl uents into the design of the plant. The objective of this research is to characterize and manage the processing effl uent. We conclude that the processing effl uents have a high potential for contamination by the abundant organic load and that have achieved the primary treatment of this potential reduction to acceptable limits by Peruvian law (98.1% turbidity removal and reduction of BOD Oxygen 96.58%), allowing the reduction of water consumption, release of hardship and its incorporation as a business friendly environment for approval of environmental authorities and the community as a whole.

In Peru, one of the main difficulties in the processing of frozen camu-camu pulp is to obtain fresh fruit with good quality, because it is damaged during the transportation from the Amazon to Lima, place where are located the processing factories. The processing parameters that maximize the pulp yield and the stability of the ungurahui nectar were evaluated by means of the Taguchi and Response Surface methodologies. The raw material used came from the town of Yurimaguas, Loreto Region - Peru, and was subjected to weighing, selection, classification, washing, disinfecting, maturing, pulping, refining, filtering, standardized (to formulate the nectar), pasteurized, packed, cooled and stored processes. The aim of this study was to extract collagen from the waste produced in the processing of anchovies (canned and surimi). To this end, non-collagenous proteins was solubilized with a solution of 0,1N sodium hydroxide and neutralized with successive washes with water (pH close to neutral). Then, the residues were decalcified with a EDTA 0,5M solution; degreased with butanol 10% and finally the collagen protein were solubilized with acetic acid 0,5M and precipitated with sodium chloride 2,6M. Collagen precipitated was dialyzed and lyophilized. The hydroxyproline content (Hip) were quantified in waste and lyophilized collagen, getting the values of 6,5 and 52,9 mg of hydroxyproline/g sample, respectively.
