Fructooligosaccharides (FOS) are fructose polymers, linked by β-glucosidic bonds (2-1), considered low caloric food sweeteners with prebiotic function and can be obtained from sucrose by biosynthesis. The fruits of the carob tree (Prosopis pallida) contain mainly carbohydrates where sucrose stands out. For this reason, the production of FOS from carob extract was optimized using a pectinase from A. aculeatus. The response surface methodology using was applied to optimize the parameters that affected production: time, temperature and carob extract; then they were verified experimentally. Variants of the genes ABCB1 and ABCC2 have been associated with an increased risk of drug-resistant epilepsy; this phenomenon, however, has been scarcely tested by means of comparisons between populations: In Latin America there have only been 3 studies. Objective: To evaluate the association between the variants C3435T of the gene ABCB1, and --24C> T of the gene ABCC2 with drug-resistant epilepsy in Peruvian patients treated at the Epilepsy Unit of a Peruvian Hospital. En el presente estudio, se seleccionaron e identificaron bacterias de ácido láctico (BAL) productoras de riboflavina, aisladas durante el proceso de elaboración de Tunta, una patata nativa peruana con un proceso tradicional de congelación y deshidratación para el consumo y conservación. De las 109 cepas BAL aisladas, 32 fueron las que presentaron producción de riboflavina y sólo cuatro mostraron un nivel alto entre 334 ng/ml a 426 ng/ml en medio libre de riboflavina. La caracterización molecular de estas cuatro cepas mostró que están relacionados filogenéticamente con Leuconostoc mesenteroides. Otros taxones identificados tras la secuenciación del gen 16S rRNA fueron Lactobacillus curvatus, L. mesenteroides subsp. dextranicum y Lactobacillus sakei. El objetivo de esta investigación fue caracterizar bacterias halotolerantes aisladas del proceso de salado-madurado de Engraulis ringens provenientes de una empresa pesquera de Chimbote (Perú). Para ello, se recolectaron tres muestras de pescado al inicio y término del proceso. Se aislaron 14 bacterias halotolerantes, 12 aisladas en medio con NaCl al 5% y dos al 10%. Se evaluó su capacidad de crecimiento a temperaturas de 4 a 50 °C y de 2.5 a 12.5% de NaCl, así como su actividad bioquímica con las pruebas de oxidasa, ureasa, indol, utilización de citrato, fermentación de carbohidratos, hidrólisis de almidón, caseína y gelatina, y su sensibilidad a penicilina, cloranfenicol, gentamicina, tetraciclina, rifampicina, sulfametoxazol/trimetoprima, estreptomicina, ácido nalidíxico y novobiocina. L-asparaginase (EC 3.5.1.1) hydrolyzes L-asparagine in L-aspartic acid and ammonia. Its efficiency is subject to its kinetics and specificity on the substrate, characteristics that vary from one source to another. Thus, microorganisms from saline environments constitute a phylogenetic and metabolically heterogeneous group for the search of new enzymes. Therefore, the objective of this study was the phenotypic and genotypic characterization of bacteria with L-asparaginase activity isolated from Maras, Pilluana and Chilca salterns. The 24 evaluated bacteria were classified as 38% Gram-negative bacilli and 54% positive; and 8% Gram-positive cocci. The majority grew in 5% salt water, pH 7.0 and 37 °C, all assimilated glucose.
