Fructooligosaccharides (FOS) are fructose polymers, linked by β-glucosidic bonds (2-1), considered low caloric food sweeteners with prebiotic function and can be obtained from sucrose by biosynthesis. The fruits of the carob tree (Prosopis pallida) contain mainly carbohydrates where sucrose stands out. For this reason, the production of FOS from carob extract was optimized using a pectinase from A. aculeatus. The response surface methodology using was applied to optimize the parameters that affected production: time, temperature and carob extract; then they were verified experimentally. El objeto del presente trabajo fue el incremento de fructooligosacáridos en el extracto de yacón (Smallantus sonchifolius) a partir de azúcares fermentables usando fructosiltransfertasas. Para ello, se buscó optimizar los parámetros críticos involucrados en la biosíntesis de fructooligosacáridos como pH, tiempo, temperatura y concentración de extracto de yacón mediante la metodología de respuesta (RSM, Response Surface Method), los cuales se verificaron experimentalmente con el fin de incrementar la concentración de fructooligosacáridos. Pretende obtener fructooligosacáridos (FOS) por síntesis enzimática a partir de los carbohidratos presentes en los frutos de algarrobo (Prosopis pallida). Para ello, primero se evaluaron las enzimas comerciales inulinasa, invertasa y pectinasa con sacarosa al 30 % a 55 °C, 150 rpm y 60 min. Por otro lado, de los frutos de algarrobo se preparó la harina, realizó el análisis proximal, extrajeron y concentraron los carbohidratos hasta 20, 35 y 50 °Bx, para luego ser almacenados a 8 °C. Los parámetros de optimización considerados en la metodología de superficie de respuesta fueron: tiempo, temperatura, concentraciones de enzima y extracto acuoso de algarrobo; posteriormente estos parámetros se verificaron experimentalmente. Objective: Paraoxonase 1 (PON1), an esterase associated with high-density lipoproteins (HDL), has several polymorphisms: the PON1 Q192R polymorphism (coding region) is responsible for variations in the paraoxonase activity of the enzyme. The PON1 192R allele is considered a risk factor for developing cardiometabolic disorders in some populations. The aim of the present study is to determine the distribution of the PON1 Q192R polymorphism and its association with the lipid profile and APO A1 in an Andean population. Objectives: To determine the serum levels of sCD36, a lipid metabolism-related molecule, in high-altitude and sea-level populations, and to establish the association of this parameter with cardiometabolic risk factors. Materials and methods: The study population consisted of 45 people from Carhuamayo (4100 masl) and 40 people from Mala (30 masl). Weight, height and blood pressure were measured. Hemoglobin was determined in whole blood, and glucose, lipid profile and sCD36 in serum. Results: It has been found that hemoglobin levels in the population of Carhuamayo were significantly higher, while weight, BMI and glucose level were significantly lower than those in the population of Mala.
