Passion fruit (Passiflora edulis) is a tropical fruit appreciated for its attractiveness and nutritional value. The yellow variety (Passiflora edulis f. flavicarpa) and the purple variety (Passiflora edulis f. edulis) are the best-known species, both rich in carbohydrates, proteins, lipids and bioactive compounds. Despite their potential, passion fruit by-products, such as seeds and peel, are underutilized, despite being sources of phenolic compounds and carotenoids. The leaves are considered insignificant, yet they contain nutrients and medicinal effects beneficial to health. Nevertheless, these by-products have diverse uses and applications. El enfoque de este proyecto de investigación se enfoca en la elaboración de galletas. sustituyendo parcialmente la harina de trigo por harinas de cáscara de maracuyá y quinua germinada. Se buscó diseñar un nuevo producto para el mercado utilizando harinas alternativas, las cuales son ricas en compuestos bioactivos. Se tuvieron en cuenta los rangos de sustitución de la harina de cáscara de maracuyá, desde el 2% hasta el 8%, y de harina de quinua germinada, desde el 5% hasta el 25%. Se empleó un Diseño Compuesto Central Rotacional 22 , generando 11 formulaciones. La evaluación, mostró que las propiedades tecnológicas el volumen específico fue significativamente afectado por los niveles más altos de harinas de quinua germinada y cáscara de maracuyá.
