Acetylation is a chemical modification of the starch structure that consists of replacing a certain number of hydroxyl groups with acetyl groups using acetic anhydride. This process depends on certain factors, such as starch source, acetic anhydride concentration, reaction time and pH. The aim of this study was to characterize the native starch (isolated from a commercial potato ‘Única’ variety) and the acetylated starches by FT-IR spectroscopy, and evaluate their physicochemical (amylose content, color) and functional properties (swelling power, solubility, water retention capacity, thermal properties, and pasting profile). Rheological and physicochemical analyses were conducted on nine varieties of peach pulps from Mendoza (Argentina) at a range of soluble solids concentration (12.5 to 28°Brix) and temperatures (30 to 50°C).The rheology of the pulps followed the power law model for all conditions, behaving as pseudoplastic fluids. Rheological: consistency coefficient and flow behavior index, using a rotational type viscometer and physicochemical parameters (methods proposed by AOAC): soluble solids, pH, water content, insoluble solids, acidity and pectin content (refractometric method) were determined in this study. Cluster analysis established two groups (1: Halford, Andross, Astengo, Bowen, Sim’s Cling; 2: Fortuna, Loadel and Palora; Sullivan Cling variety could not be assigned to any group) with significant differences.

Pocas ideas y actividades han recibido elogios tan hiperbólicos como las presentadas en el mundo por Hernando de Soto sobre la informalidad. Premios Nobel en economía, presidentes de varios países, revistas muy importantes y organizaciones multilaterales han respaldado el impulso del registro de propiedad de los pobres, particularmente sus viviendas, como la clave para lanzar una revolución económica mundial desde abajo. En este trabajo presentamos el respaldo institucional de esas ideas, la sustancia analítica de los principales argumentos, la precisión descriptiva de las instituciones operando en el tercer Mundo y los resultados de la aplicación de los programas de titulación promovidos. De esta manera, evaluamos la relación entre la difusión y el poder de una idea con su contenido formal y su efectividad para cambiar el mundo de los pobres.

This research aimed to analyze the psychometric evidences of the Brief silence Scale (BRS) in Peruvian university students. A total of 468 students from public and private universities participated, from which 62,6% were women and 37.4% were men aged 18-50 years old (M=23.97, SD=6.58). The confirmatory factor analysis confirmed the adjustment of the oblique model (CFI=.993; TLI=.987; RMSEA=.004; SRMR=.023) and adequate reliability values were obtained (α = .79 y ω = .85). The purpose of this instrumental design study was to analyze the psychometric evidence of the Multidimensional Scale of Perceived Social Support (MSPSS) for its application in university students in Metropolitan Lima. A total of 520 students participated, 292 women (56%) and 228 men (44%), between 18 and 61 years of age (M = 24.89, SD = 5.17). The confirmatory factor analysis showed acceptable values for the bifactor model: χ2/gl = 4.645, CFI = .99, TLI = .98, SRMR = .027, RMSEA = .084 (90% C.I., .072, .096) and WRMR = .99. The present research aimed to evaluate the effect of pH and NaCl on the absorption power of water, gelling, emulsifying and foaming capacity of residual linseed meal (Linum usitatissimum L.). The residual flour (without mucilage) was obtained by boiling the seeds in distilled water, for their subsequent filtration and drying (40 °C x 48 hours) and conversion into flour (type A flour). Whole flaxseed flour was also obtained (without extracting the mucilage) which was called type B flour. The techno-functional properties were determined at pH 3, 5, 7 and 9 as well as at NaCl concentrations of 0.1, 0.25 and 0.5 M. We have obtained and characterized chemical, physicochemical and functional starch quinoathree varieties: black Collana (VC), red pasankalla (VP) and white Junín (VB). Proximalchemical analysis and grain quinoa starch were performed by the AOAC method (2000),starch extraction was performed in laboratory scale; the highest yield is 30.62% in the VBfollowed by VP with 26.71 %, while VC won at least 18,95%; there is significant differenceat (p <0.05) between varieties.
