The association of processed food consumption with health problems has sparked interest among consumers and the food industry in the production of healthier and more sustainable foods. Processed meats, which are made from the skeletal muscle of edible animal species, have unfavorable characteristics due to the incorporation of ingredients and synthetic additives associated with the occurrence of diseases and allergies. In this context, this review presents the pijuayo as a healthy and sustainable alternative in the formulation of meat and fish products. The fishing industry generates large quantities of by-products, most of which are not used and are therefore discarded. The objective of the present research was the elaboration of a pâté-type sausage from mechanically recovered meat of rainbow trout (Oncorhynchus mykiss). The meat was obtained from trout skelons, which were passed through a grinder and sprayed with a mixture of α-tocopherol (0.02%) and ascorbic acid (0.05%). The formulation of the pate was as follows: mechanically recovered trout meat (74.4%), salt (1.3%), sodium tripolyphosphate (0.8%), starch (2%), soy protein isolate (2.4%), margarine (16.7%), soy lecithin (1.9%), onion powder (0.2%), garlic powder (0.2%) and pepper powder (0.1%). The microplastics (PM) present in five fish species of economic importance in Peru were evaluated: Sciaena deliciosa (Tschudi, 1846) (Sciaenidae) “Lorna drum”, Isacia conceptionis (Cuvier, 1830) (Haemulidae) “Cabinza grunt”, Scartichthys gigas (Steindachner, 1876) (Blenniidae) "Giant blenny", Mugil cephalus (Linnaeus, 1758) (Mugilidae) "flathead grey mullet" and Scomber japonicus (Houttuyn, 1782) (Scombridae) "Chub mackerel". The stomach and gill contents of each fish were digested with 10% KOH, followed by a filtration process to search for PM. The MPs were classified by color and by shape. Due to the importance of diversifying the feed input matrix for aquaculture through low-impact local biomass, the effect of replacing corn flour with Lemnaminor flour in diets for juvenile Piaractus brachypomus was evaluated. Four isoprotein diets were formulated with 0% (T0), 25% (T1), 50% (T2) and 100% (T3) replacement and administered to 240 fish grown at 10 fish m³ for 75 days. Animals were fed 5% of their body weight, twice a day. Weight gain, specific growth rate (SGR), apparent feed conversion (AFC), protein efficiency (PE), hepatosomatic index (HSI) and survival were recorded. Water is an important element for almost all biological process and several living organisms like fishes, have their habitat in such a kind of aquatic ecosystems. In the city of Villahermosa, Tabasco Mexico is located the Lagoon of las Ilusiones, which is the habitat of several taxonomic groups like fishes. Unfortunately, the imminent pollution of the water body has been documented and recently evaluated the water well-being by cytological and genetics studies through the use of naïve fish species which are a common. The results of several studies show the terrible conditions of water quality, the effects it manifests on the hematopoietic genetic/cellular components; due to the presence of intracellular damage and various atypical levels of chromosome counts.

Between 2014 and 2015, 19 of 25 Peruvian regional authorities were being investigated for activities related to corruption. At the end of 2018, 10 of the 19 involved were tried with custodial sentences as a result of their illegal actions. But, despite this apparent effectiveness at the judicial level, certain cases with a significant number of reports and a similar background to those convicted escaped the sentences against them.Thus, the question addressed in this paper is: what variables explain the evasion of effective sentences in processes linked to corruption by subnational governments? Heavy metal contamination in fish and shellfish is a critical issue that compromises food safety and human health in Ecuador. Metals such as mercury (Hg), lead (Pb), cadmium (Cd), and arsenic (As) accumulate in aquatic ecosystems through bioaccumulation and biomagnification processes, increasing their concentration along the food chain. The study reveals a concerning bioaccumulation of heavy metals in aquatic species, particularly in Thunnus albacares and Anadara similis, with Hg (9.60 mg/kg) and As (16.99 mg/kg) levels exceeding regulatory limits. In the conservation process, molasses and rice powder were used as a substrate and Lactobacullus fermentus, obtained from the digestive tract of the piglet, as a fermenter.
