Se determinó la influencia generada en el tiempo de esterilizado por la variación del líquido de cobertura en la producción de conservas de anchoveta en tipo entero de envase ¼ Club RR-125. Estas comparaciones se realizaron mediante pruebas de penetración de calor comparativas para cada producto con su líquido de gobierno respectivo teniendo como consideración la similitud de los parámetros restantes; fijando como la letalidad objetivo F0 = 6 min para alimentos de baja acidez. Se demostró que el comportamiento de la curva de penetración de calor para la conserva en salsa de tomate como líquido de coberturas es de tipo quebrada (fh = 18,5 min y f1 = 36,5 min) y que el tiempo de procesamiento en envase ¼ Club es de 49 min, para anchoveta en aceite vegetal 47 min (fh = 22,5 min) y para anchoveta en agua y sal 40 min (fh = 17 min).

El objetivo de la investigación fue obtener un hidrolizado proteico por vía enzimática, a partir de colágeno purificado de pescado, mediante el uso de la proteasa Delvolase. Además, se buscó caracterizar el hidrolizado de colágeno purificado de pescado, obtenido con los parámetros más eficientes, mediante la determinación de algunas de sus propiedades funcionales. La hidrólisis fue catalizada por una proteasa comercial (Delvolase®), se optimizó las condiciones de hidrólisis con el uso de una metodología de superficie de respuesta (MSR). El modelo fue propuesto con respecto a los efectos de la temperatura (T), tiempo (t) y enzima (E), en rangos de T: 55 – 65 °C, t: 2 h – 6 h, E: 0,03% - 0,15% respectivamente, encontrándose un óptimo grado de hidrólisis (GH) de 12,59% para un tiempo de 2 horas, a una temperatura óptima de 64.97 °C. The fishing industry generates large quantities of by-products, most of which are not used and are therefore discarded. The objective of the present research was the elaboration of a pâté-type sausage from mechanically recovered meat of rainbow trout (Oncorhynchus mykiss). The meat was obtained from trout skelons, which were passed through a grinder and sprayed with a mixture of α-tocopherol (0.02%) and ascorbic acid (0.05%). The formulation of the pate was as follows: mechanically recovered trout meat (74.4%), salt (1.3%), sodium tripolyphosphate (0.8%), starch (2%), soy protein isolate (2.4%), margarine (16.7%), soy lecithin (1.9%), onion powder (0.2%), garlic powder (0.2%) and pepper powder (0.1%).
