The thesis has two purposes: The first one is to build a mathematical model that better approximates (with respect to the mathematical model in [2]) to the behaviour of the wine fermentation process with the addition of certain amount of nitrogen at some instant of time, based in [2]. This mathematical model is described by mean ordinary differential equations including some parameters which will be identified solving some optimization problems. The second purpose of the thesis is to study the improved model but introducing some control variables in order to stabilize in an appropriated sense the corresponding dynamical system of the new model. This is a kind of MIMO nonlinear system control problems and will be solved using the tools in [6].La tesis tiene dos objetivos: El primero es construir un modelo matemático que aproxime mejor (con respecto al modelo matemático en “Modeling th...

Optimization of the steam quinoa cooking process was carried out, using a response surface design (RSM) 3-level: 3k factorial, and the multiple response optimization methodology of the desirability function (Dx) was used to find the optimal region, which are improved tools to optimize the variables of a process, evaluate the maximization of the water absorption index (WAI), water solubility index (WSI), degree of gelatinization (GE) and the minimization of cotyledon detachment (DC) of quinoa (Chenopodium quinoa Willd). The equipment used was a vertical cook with a steam generator, the study cooking variables, the steam pressure, and the cooking time. The optimal process values were: Pressure 1.5 kgf.cm-2 and time 8 minutes for the best characteristics of cooked quinoa WSI of 26.411%, WAI of 7.960 (g.g-1), GE of 89.245% and CD of 18.40%, the value of the desirability function as an indica...

Fructooligosaccharides (FOS) are fructose polymers, linked by β-glucosidic bonds (2-1), considered low caloric food sweeteners with prebiotic function and can be obtained from sucrose by biosynthesis. The fruits of the carob tree (Prosopis pallida) contain mainly carbohydrates where sucrose stands out. For this reason, the production of FOS from carob extract was optimized using a pectinase from A. aculeatus. The response surface methodology using was applied to optimize the parameters that affected production: time, temperature and carob extract; then they were verified experimentally. The biosynthesis process of FOS was carried out with carob extract at the concentrations of 20, 35 and 50 ° Bx, Pectinase at 10, 35 and 61mg, at 45, 55 and 65 °C for 0,5, 9,5 and 18 h, with stirring at 150 rpm The analysis methods were glucose oxidase and AOAC 999.03, for glucose and FOS respectively a...

The aim of the present work was to optimize the sensorial and technological features of ice cream. The experimental work was performed in two stages: 1) optimization of lactose enzymatic hydrolysis, and 2) optimization of the process and product. For the first stage a complete factorial design was developed, optimized using both response surface and the steepest ascent method. In the second stage a mixture design was performed, combining the process variables. The product with the best sensorial acceptance, high yield and low cost was selected. The acceptance of the product was developed by an untrained taster’s panel. As a main result the sensorial and technological features of the final product were improved, establishing the optimum parameters for its elaboration.

Soursop leaves contain bioactive compounds which degrade after being separated from their native matrix. In order to protect their functionality, encapsulation can be applied. This investigation aimed to optimize the parameters for microencapsulating a hydroethanolic extract of soursop leaves after selecting a technique among freeze (FDM) and spray drying (SDM). Selection was performed through a factorial design (23) including as factors: the technique (FDM and SDM), the encapsulant (Gum Arabic and maltodextrin) and its concentration (5% and 10%), for maximizing encapsulation efficiency (EE). Spray drying microencapsulation with maltodextrin at 10% showed the highest EE. Subsequently, the drying temperature and the feeding rate were optimized through a multilevel factorial design to minimize moisture and to maximize the powder solubility and the EE. A significant effect on the response v...

The population dynamics of organisms are strongly influenced by life-history strategies that result from the optimal allocation of energy to vital functions such as growth, reproduction, and survival. These strategies, characterized by phenotypic traits, emerge as evolutionary adaptations to specific ecological conditions and define functional trade-offs relevant facing biotic and abiotic pressures. The aim of this study is to examine the link between life history and population dynamics from a bioenergetic perspective, articulating individual and population-level processes through mathematical models that capture adaptive decisions in simulated environments described in terms of constant, decreasing, and periodic resource availability over time. Using a discrete-time mathematical model with two state variables, internal energy and survival probability, energy allocation toward reproduct...

The research in the laboratory was made operating variables (reactant concentration, pH and oxidation potential) of pyrite leaching gold from river Tablachaca (Ancash Peru) with thiourea (TU) followed by electro-deposition of gold. The experimental study was conducted in three stages: Oxidation of thiourea leaching of gold and gold electroplating. As an alternative to chemical agents, TU oxidation via electrolysis was conducted to obtain formamidine disulphide (FDS), which serves as an oxidizer in the dissolution of gold. The optimum degree of conversion of formamidine disulfide thiourea in 2.5 h was obtained by applying a FEM of 4.5 V with a pH of 1.5. The anodic and cathodic compartments of the electrochemical reactor were separated by an anion membrane with the purpose of eliminating undesired reactions at the cathode. Prior to the leaching step, the mineral was washed with sul...

The objective of this study was to optimize the formulation of low-fat cabanossiusing the Mix Design method (D-Optimal) from 16 cabanossi formulationscomposed of Lama glama meat (60-80%), pork fat (10-20%) and cookedpotato pulp (10-20%). The response variables were: a texture profile analysis(cohesiveness, chewiness, hardness, gumminess and springiness), chroma(C*), moisture, yield, water activity and pH. For the optimization stage, it wasconsidered minimizing the pork fat, maintaining the hardness and humidity assimilar as to those in a commercial cabanossi. The mixture design analysis setup the formulation with 72.41% of llama meat, 10.78% pork fat and 16.81%cooked potato pulp as the optimum, with 0.84 of desirability. This formulationwas validated through the experimental process and contrasted by the t-Studenttest. It confirmed the effectiveness in the prediction of the mathematical ...

This research presents a comprehensive approach to the design, control, and structure of an innovative fermentation machine for the production of Tocosh from potato fermentation. In order to achieve this objective, a thorough analysis of the various crucial parameters involved in the fermentation process has been carried out. The main objective of the design proposal is the real-time monitoring of essential factors such as pH and temperature in the process. To achieve this, a control system has been designed that will allow precise and constant monitoring of the temperature and pH parameters, and monitoring of the water level was also carried out to improve the quality of the product. Furthermore, the structural analysis of the fermentation chamber is addressed in detail, using Inventor software for the creation of three- dimensional models of each component and for the generation of the...
