The current research aims to reassess no traditional meats that in sausage shape get to entry in the local market, according to their nutritional qualities, such as low cholesterol and high protein, which shows the alpaca meat against pork, and also revalue mutton. The presence of Gigartina chamissoi (seaweed) in the formulation is important as a source of iodine, complex polysaccharides (fiber) and natural gelling agents which increase its biological value. Gigartina chamissoi besides raise its nutritional value, constitutes a prebiotic product for counter propensities against cancer cells in tissues such as mucous (esophagus, stomach), glandular (breast) and glandularvessels (prostate). To this effect has been developed an experimental design allowing manufacture sausages in more optimal hygienic conditions. The proximal chemical analysis of the finished product (Table 9) showed that F...

In the field of education and technology companies, online judges play an important role in the development of programming skills because on these platforms students must solve challenges using specific programming languages. However, the sheer number of coding challenges available can be overwhelming for students, leading to frustration and loss of interest. To resolve this situation, recommender systems can be an effective solution. However, programming judges have not delved far enough into this area. Therefore, this research focused on evaluating six artificial intelligence techniques through a cloud-based architecture for the prediction of the level of difficulty from the statements of the problems to be coupled to a recommendation system. To validate the experiments, a real CodeChef programming judge was used and the experiments were evaluated through statistical tests. The results...

In the camu camu (Myrciaria dubia) processing, the peels and seeds are the main residues with a high potential for use as they contain anthocyanins (peel) and phenolic compounds. The objective of this research was to take advantage of camu camu peels and seeds as ingredients for infusion filters, and to evaluate the effect of drying. First, the peels and seeds were dehydrated at three temperatures (50, 65 and 70°C) and characterized in total anthocyanins and total phenolic compounds. Then, they were sieved considering two size ranges: small (between 0.1 and 0.475 cm) and large (larger than 0.475 cm) to be evaluated sensorially by a trained panel as an infusion, using a hedonic scale of general acceptability of 10 cm. The results showed that the peels contain anthocyanins and a higher content of phenolic compounds. In the case of the sensory evaluation, the panel preferred the large-rang...

Cocoa beans are the main raw material for the manufacture of chocolate and are currently gaining great importance due to their antioxidant potential attributed to the total phenolic content (TPC) and the monomeric flavan-3-ols (epicatechin and catechin). The objective of this study was to determine the degradation kinetics parameters of TPC, epicatechin, and catechin during the roasting process of Criollo cocoa for 10, 20, 30, 40, and 50 min at 90, 110, 130, 150, 170, 190, and 200 °C. The results showed a lower degradation of TPC (10.98 ± 6.04%) and epicatechin (8.05 ± 3.01%) at 130 °C and 10 min of roasting, while a total degradation of epicatechin and a 92.29 ± 0.06% degradation of TPC was obtained at 200 °C and 50 min. Reaction rate constant () and activation energy () were 0.02–0.10 min−1 and 24.03 J/mol for TPC and 0.02–0.13 min−1 and 22.51 J/mol for epicatechin, respe...

The teaching-learning process is affected, primarily, at kindergarden due to many factors that marks the learning content quality, such as wrongly choosing the educationalmaterial. Most teachers deem that any object that attracts a child is an educational mean. However, in the end, this object may not serve as a learning facilitator, nor help to achieve theobjectives set out. The la e k of responsibility and professional ethics are shown by actions such as the lack planning of learning activities, as well as the lack of concern in giving the student a comprehensive education, thus drifting away from the purpose of teaching. The current use of traditional methodologies that are little conventional and limits children's potential development evidence the lack of continuous training and updating in new methodologies. The aim of this study was to optimize the content of EPA and DHA in the process of enzymatic acidolysis of canola oil and concentrated of long-chain polyunsaturated fatty acids (LCPUFA) in structured triacylglycerols (TAGs). For this purpose, nonspecific lipase B from Candida antarctica immobilized in a supercritical CO2 was used. Crude salmon oil obtained from the industrial byproducts was used to obtain LCPUFA concentrate. Initially, a LCPUFAs concentrate was obtained by basic hydrolysis and posterior complexation with urea. Subsequently the process variables were optimized enzymatic acidolysis were optimized using a central composite rotational design 25-1 + star, with 5 factors and 30 experimental trials, based on the response surface methodology. The optimal conditions that maximized the content of EPA and DHA to 3.92 g/100 g TFA and 9.09 g/100 g TFA, respectively in the purified TA...

This paper proposes an interpretation of the renowned last section of Hume's Natural History of Religion, after examining this work and its relations with some of his other works. The aim of this study is to give the clues to understanding Hume's critique of a rationally founded natural religion. The paper mainly contends that Hume destroys the basis for a rational religion independent or autonomous regarding superstition. He does so by means of a historical analysis of religious belief's process embedded in human nature's principies. All forms of religion are, therefore, some form or other of superstitious belief.

Mobile devices have acquired an increasingly prominent role within the media arena. The consolidation of smartphones as the preferred platforms to access digital journalistic information has led to a number of changes in how the news is produced, distributed and eventually consumed. This article describes an evolving model of journalistic content for mobile devices to contribute to the theory of mobile media already set in motion by other peer researchers. Framed within the media ecology, the actor-network theory and the study of the society-technology relationship, we start with a bibliographic review to analyse innovations in the mobile digital ecosystem that are related to semantics (new formats and content genres) and social aspects (new forms of appropriation of media and technologies) whilst also identifying the main actors currently operating in this ecosystem. This approach makes...

The study of the complex ultracellular processes of nucleic acids is a subject debated as a scientific argument in favor of Intelligent Design (ID). The objective of this work was to analyze some molecular processes of the nucleic acids that suggest the confirmation of the ID theory, through the technique of documentary content analysis. First, the chemical structure of DNA and the combination of nitrogenous bases reflects that the genetic information of each created being is an original mixture of nitrogenous bases that makes each individual unique in the history of the world. Secondly, by studying the processes of DNA replication and repair, it is observed that each enzyme fulfills its function in a coordinated and organized manner avoiding the occurrence of errors and, should this occur, the cell has had very fine repair mechanisms. that correct these alterations in the best possible ...
