Camu camu is the fruit that has the highest content of vitamin C, which is 100 times higher than the lemon. This tropical fruit is native to the Amazon region and it is mainly distributed in Bolivia, Brazil, Colombia, Ecuador, Peru and Venezuela. Passion fruit peel is an agro-industrial waste that with added value can be used in the food industry. The purpose of this work was the physicochemical, functional and rheological characterization of passion fruit shell flour (HCMr). Physicochemical, functional and rheological analyzes were carried out. The humidity value of HCMr was 11.25%, this is within the requirements of Peruvian standards. Protein values (5.14%) are low compared to cerelae flours. The total dietary fiber value was 63.88%. The total values of polyphenols and antioxidant activity were 504.75 mg G.A.E./100g and 1520.49 µmol ET / 100g respectively. The water retention capacity value was 12.93 ml retained water / g. The Rietveld refinement method has taken high relevance since its creation. Nowadays, it is an useful tool in many fields of industry, materials science, and technology. The triiodothyronine uptake test, was performed on 44 patients suffering from a variety of thyroid diseases plus 11 pregnant women, using this hormone labeled with I-131 and ionic exchange resin. Among the 44 patients there were 20 with thyrotoxicosis, 10 hypothyroid, 8 with diffuse non-toxic goiter and 6 with other thyroid conditions with no evidence of thyroid disfunction. An averange of 48,9% uptake for the hyperthyroid, 22,2% for the hypothyroid an 23,3% for the pregnant women was found. This gave a very significant difference from the normal group that averaged 32% according to a previous report. In recent years, the consumption of beverages has increased; however, the excessive consumption of processed and packaged foods with a high sugar content is detrimental to human health as it has led to an increase in various metabolic diseases, which is why it is essential to introduce into the food chain new options of beverages enriched with fruit pulp, rich in polyphenolic compounds and antioxidants. The functional compounds present in food are essential to prevent certain types of cancer, so it is important to know how they vary in the food during storage. The study was conducted in the Puno region in 2019; the objective of the trial was to evaluate the behavior of functional compounds in two accessions of Isaño: Yana añu (purple-dark color) and Yellow pumpkin with purple eyes during storage at natural conditions 13 ºC and 65 % of relative humidity. Mineral composition modulates plant health, agro-morphological attributes, and functional quality in coffee, yet large-scale evaluations remain limited. In 150 Coffea arabica L. accessions, we quantified grain minerals (Ca, K, Mg, Na, P, Zn, Cu, Fe, Mn); resistance to coffee leaf miner (CLM), coffee berry borer (CBB), and coffee leaf rust (CLR); agro-morphological traits; bioactive compounds (phenolics, flavonoids, chlorogenic acid, trigonelline, caffeine); and antioxidant capacity (ABTS, DPPH, FRAP). Mn and Zn were associated with greater resistance to CBB and CLM, whereas P and Ca related with lower susceptibility to CLR; a P–Zn antagonism emerged as a critical nutritional axis.
