The papaya (Carica papaya L.) is an economically important crop in Mexico and Latin America. The nursery phase plays a primary role in the production process, at this stage, it is susceptible to pests and diseases. The use of biofertilizers based on entomopathogenic fungi (EF) is an alternative to produce healthy and quality seedlings, through biological agriculture. This research work uses the following raw materials: mango (Mangifera indica), papaya (Carica papaya), and camu camu, the latter being a fruit rich in vitamin C, which adds value to this type of product. These raw materials were acquired from the producers' market and Belén market. The results were taken from the composition tables of the year 2017. The raw materials were then weighed at the pilot plant for canned foods of FIA-UNAP. A standard jam-making process was carried out using these three raw materials, with proportions of mango: papaya: camu camu (1:0.5:0.1). Chemical composition and technological and nutritional value of "papaya height"(Carica pubescens) also known as "Arequipa papaya" was studied using official AOAC methods and adapting the standard procedure of food technology. The samples were analyzed for physico-chemical proximal composition and content of vitamins and minerals by VIS spectrophotometric method through oxidation-reduction and atomic absorption spectrophotometry. En el presente trabajo de investigación se trabajó con dos frutas nativas de la amazonia peruana las que fueron Papaya Carica papaya L. y el Camu camu Myrciaria dubia H.B.K. La lúcuma (Pouteria /Lucuma L.) es una fruta que se comercializa en fresco y como harina, para emplearla como 111s umo en repostería e industria alimentaria. El objetivo del estudio fue determinar los parámetros que permitirán diset'iar un secador de bandejas con flujo de aire caliente, con la finalidad de producir harina de lúcuma. Se empleó lúcuma fresca en su madurez fisiológica y con buen estado sanitario; la pulpa fue cortada en rodajas de 0,3 cm de espesor y colocadas en un secador de bandejas con aire caliente de laboratorio. Se ensayaron tres temperaturas para el aire de secado (40, 50 y 60 ºC) y tres velocidades del aire: 2,5; 3,0 y 3,5 m/s. El tiempo mínimo de secado fue de 120 minutos.
