The social, economic, and cultural development of a country is closely linked to the performance of MSMEs, particularly in the gastronomic sector, due to their capacity to generate employment and stimulate tourism. This study aimed to design a value chain evaluation tool for restaurants, regarded as key actors in emerging economies. Amethodology combining the World Bank's approach and Porter's model was applied. The results led to the development of a tool structured in three stages: service production, marketing, and service provision, incorporating criteria adapted from primary and support activities. This flexible tool enables the diagnosis of business strengths andweaknesses, supporting decision-making, sectoral evaluation, and the formulation of productive development policies.

Risk mitigation in global supply chains has grown in importance in recent years, in tandem with globalization and both the commercial and security threats faced by firms both large and small. This study hypothesizes that a firm’s ability to manage risk strategy— and therefore support its competitiveness—is determined by a symbiotic triad of factors: the resources it utilizes; network systems; and performance criteria it employs. The present study aims to conduct an analysis in the food sector, with a case study in Salinas Canton, Santa Elena Province, where strategies will be implemented to mitigate risks in the supply chain and logistics, thereby promoting greater market sustainability. Employing a mixed methodological approach, it combines bibliographical research with reviewed scientific bases to develop these strategies. A 60-year-old woman born in Tarma and living in Lima, with a history of biomass exposure, contact with a patient with tuberculosis, arterial hypertension, heart arrhythmia and mother with ovarian cancer, visited the medical center with progressive dysphagia, 15-kilogram weight loss and evening fever for seven months. A previous endoscopy revealed an esophageal tumor. A CT scan showed middle and distal third esophageal wall thickening, and 10x10 mm mediastinal adenopathies. Extrapulmonary Tuberculosis, accounting for 14% of total tuberculosis cases, represents an uncommon manifestation, with osteoarticular involvement being a rare form. We present the case of a 28-year-old male patient who initially exhibited respiratory symptoms and subsequently developed acute pain and swelling in the second finger of the right hand after exertion. Specific treatment was initiated at a peripheral center upon the isolation of Mycobacterium tuberculosis in sputum. However, due to persistent symptoms and the need for further investigations, the patient was referred to a more specialized center. This research proposes a methodological framework based on chaotic dynamics and nonlinear equations to analyze the relationship between international stock market indices (Dow Jones and LME) and the price behavior of imported commodities essential for electrode manufacturing in Peru. The volatility of these inputs directly impacts the profitability and sustainability of the national welding industry, especially under highly uncertain global conditions. ARIMA models (Box-Jenkins), symbolic regression (SR), and Verhulst logistic equations were applied to model time series of commodity prices from 2018 to 2023. This research analyzes the strategic dimensions of the Aptiv company's supply chain, as a model of optimal functioning in inventory management and supply flows that make it resilient and sustainable. Objective: To demonstrate the positive impact of the cost system for processes in the productive chain of asparagus in agro-export companies, this given the need to know, in a reliable way, their costs and that this, in turn, allows them to improve the taking of decisions. The objective of this article is to value the relevance of risk management in supply chains. That is why a group of tools for risk analysis and evaluation were selected and applied in a stakeholder process of a Cuban real estate chain. It was realized using the BestLog case method. The study is classified as qualitative, descriptive and exploratory. It was realized a study of seven tools for the identification of risk with the study of the literature on this subject. The principal results are the identification of the attributes of each tool and the risk matrix of this study case. The theoretical value of this work is the systematization of risk tools, and the practical value is focused on determining actions to mitigate risks in the Cuban case study, and also learning lessons after the initial application of the selected tool.

The case of a 65-year-old male with chronic diarrhea, periorbital ecchymosis, and hemolacria is described. Laboratory studies, biopsy, and immunohistochemical analysis were performed to confirm the diagnosis. The dependent variable was the confirmed diagnosis of AL amyloidosis, while the independent variables included clinical symptoms and diagnostic test results. Descriptive techniques were used to analyze the clinical and laboratory data. The patient presented with chronic diarrhea unresponsive to conventional treatment, periorbital ecchymosis, and hemolacria. Diagnostic studies revealed amyloid deposits in the tissues. In this study, the Markov Chains model was applied to identify areas with the highest risk of earthquakes in the geographic area of Lima - Ica, which is considered one of the most active seismic zones in Peru. There are few research works with the application of probabilistic models to earthquakes in Peru. In the present study we have used the information of the earthquakes that have occurred in Lima-Ica from 2017 to 2019 (IGP) and we have found that the Lima-Oeste area is the one with the highest risk of earthquakes, approaching this result , for the case of Lima, with the result found by other authors, with different methods.

The company chosen for this case of study was a textile SME that represents qualitatively and quantitatively the sector. This allows us to measure the impact on the economic retribution and costs incurred by inappropriate supply management. The research aims to optimize this supply management through an improved model based mainly on Lean Warehouse and JIT. Successful cases of applying the different Lean techniques guarantee improvements in process efficiency, resulting in cost reduction [8]. Although there are scientific articles that implement Lean tools to improve supply problems, the innovation of the article lies in the implementation of Lean Warehouse and Just-in-Time simultaneously, adding 5S tools. Furthermore, the application of a supplier assessment to support the new methodology implemented in the company.
