Beef aging is a process that involves the interaction of enzymes and chemical transformations that directly influence changes in flavor and texture, which in turn can determine the sensory experience for guests. The purpose of this study was to compare, in terms of texture, the aging of beef brisket cuts through two techniques: with animal fat coating and dry aging, over a period of 21 days, and to determine the acceptability of end consumers. The cuts were stored under controlled temperature and moisture conditions (2 °C and 60 % relative moisture, respectively), with continuous monitoring to ensure food safety. Finally, they were cut into 2 cm thick steaks, fried to medium doneness with salt, and sensorially evaluated by a panel of 27 individuals. The search for new protein sources for food formulation is increasing. Black soldier fly (Hermetia illucens) larvae have high levels of protein, good fat content and are rich in essential amino acids, making them an alternative source of dietary protein. In this work, the nutritional properties and metabolomic characterization of black soldier fly larvae meal native to the Peruvian Amazon reared on three organic waste substrates were carried out. The three meals had a high protein content (38.90-44.68%), lipids (26.96-31.01%), as well as a high potassium, calcium and low sodium content. The larvae meal fed with orange bagasse presented the best content of iron and manganese. The fatty acid profile showed a high content of palmitic, oleic and linoleic acids for the three flours. This research proposes a production model capable of increasing the Overall Equipment Effectiveness (OEE) using the methodology Lean Manufacturing and TPM. The case study is a company in the livestock industry where the 4 phases of the model were implemented. The first phase is the implementation of the Poka-Yoke tool. Then follows the implementation of the MRP. After that, the implementation of a preventive maintenance plan and the last phase is implementing the 5’s tool. After validation in the Arena software and the simulation of the implemented production model, it is shown that the OEE indicator increases by 15.69%, managing to achieve a productivity improvement.

El presente trabajo se desarrolló en el Laboratorio de Ingeniería y Proyectos y el Laboratorio de análisis de los alimentos de la Facultad de Ingeniería Agroindustrial de la universidad Nacional de San Martín, y está orientado a encontrar parámetros adecuados para la deshidratación del follaje de ramio (Boehmeria nívea), especie de alto valor nutritivo y que se adapta satisfactoriamente a las condiciones ambientales que presenta la región San Martín. The objective of this study was to determine the prevalence of bovine viral diarrhoea virus (BVDV) and persistently infected (PI) animals in dairy herds located in Majes, Arequipa, Peru. In the first phase, 204 bulk tank milk samples from to 204 herds were collected al the local commercial processing plant in Majes for detection of antibodies against BVDV by indirect ELISA test. In the second phase, 286 blood samples were collected from 57 strong positive (Optical Density [OD] ? 0.900) herds for the detection of antibodies against BVDV and in PI animals by the indirect and capture ELISAs respectively. In the third phase, blood samples were collected from all animals ranging from 6 to 24 months of age from three herds that had at least one PI animal. The knowledge of the parasitic fauna of the Reptilia Class is important for the identification of pathogenic agents and effective therapy. The study focuses on the use of husks of plant origin for the production of silage for livestock. Four vegetable peels stand out: cassava, potato, passion fruit, and banana, each with beneficial properties for fattening and optimal growth of animals. Traditional silage methods, which involve machinery and emit polluting gases, contrast with the proposal to use domestic plant waste, thus reducing the carbon footprint. In addition to improving livestock food security, this approach provides additional income to households, enhancing quality of life. A novel Fibre Electronic Characterizer (called Fiber EF) was developed and validated. In the development of the Fiber EF, mechanical, optical, electronic and computer components were used and assembled. For the calibration, validation and evaluation of the potential use in animal fibres samples of well-known diameter patterns were taken from tops of sheep, mohair, alpacas, as well as samples of fibre snippets of vicuñas and alpacas, which were measured before and after calibration with the Fiber EF, OFDA2000 in 100 mode and Laserscan. Snippets (n=299) of unwashed alpaca samples were also measured in the OFDA 2000 and in the Fiber EF under field conditions.             The aim of this study was to determine the behaviour and management practices related to the welfare of the animals destined for slaughter in an abattoir in the city of Sogamoso, Boyacá, Colombia. Behavioural and management indicators were evaluated before, during and after desensitization in 100 cattle aged 1 to 5 years. The evaluation parameters were classified as excellent, acceptable, not acceptable and problem, according to a system proposed by the American Meat Institute.
