In the camu camu (Myrciaria dubia) processing, the peels and seeds are the main residues with a high potential for use as they contain anthocyanins (peel) and phenolic compounds. The objective of this research was to take advantage of camu camu peels and seeds as ingredients for infusion filters, and to evaluate the effect of drying. First, the peels and seeds were dehydrated at three temperatures (50, 65 and 70°C) and characterized in total anthocyanins and total phenolic compounds. Then, they were sieved considering two size ranges: small (between 0.1 and 0.475 cm) and large (larger than 0.475 cm) to be evaluated sensorially by a trained panel as an infusion, using a hedonic scale of general acceptability of 10 cm. The objective of this work was to quantify either physical and chemical attributes of the whole along with grounded seeds from Castilla pumpkin (Cucurbita moschata Duchesne) and bitter pumpkin (Apodanthera undulata A. Grey). The parameters data for whole seeds of both pumpkin varieties were; physical dimensions, internal friction, external friction and particle size, while for their ground compound were; electric conductivity, soluble protein, total protein, carbohydrates, oil concentration and main minerals. The extraction process was performed in an ultrasonic bath and the orthogonal composite central design of the response surface methodology (RSM) was used to determine the optimal extraction conditions, using two factors: ethanol concentration (48.44 to 91.56%) and extraction time (13.83 to 46.17 min). Pisco grapes are 8 known varieties of Vitis vinifera from which pisco is obtained during the pisco production process, by-products such as seeds, skins and others are released from the fruit; the seeds are lately becoming especially important due to their high content of polyphenols and their antioxidant properties. There are several methods for obtaining extracts and in order to obtain extracts with the highest possible polyphenol content in this study, an ultrasonic bath with a solvent system ethanol: water: acetic acid (90/9.5/0.5) is used, which is then taken to dryness in a rotary evaporator. The objective of this article was to analyze the incidence of State contracting processes in the institutional management of the National Police of Peru (PNP), 2014-2018. The research design was non-experimental, applied, correlational and analytical. The population consisted of 370 administrative and police personnel of the PNP Logistics Directorate. The sample comprised 188 workers of the PNP Logistics Directorate. The survey technique made data collection possible. The protein digestibility of pajuro seeds (Erythrina edulis Triana) was determined after the conventional cooking process. The processed seeds were dried, ground and incorporated into isoproteic and isocaloric diets for evaluation with Holtzman rats. The results were expressed in terms of means and standard deviations. A one-way analysis of variance (ANOVA) was performed with Tukey's multiple comparison test to determine significant differences (p <0.05) in the proximal composition values ​​and a correlation analysis between protein consumption / gains weight and feed intake / weight gain. Seeds of two cultivars were sown (with and without disinfection process before sowing) on Petri dishes, some with "Blotter test" paper and others with five agarized culture media. All of them were placed in a chamber with 26 ºC± 2 and 16 h of photoperiod, and were incubated during seven days. After this period of time, the maximum number of different fungi genera developed on each substrate was registered, and the seed germination percentage was calculated. A total of fourteen genera of fungi (field and storage ones) were found, being Alternaria the most frequently isolated. In relation to the maximum number of fungi genera found, significant differences among the media analyzed (p>0,001) were detected, resulting the media APG, CZ and PCA the most effective one...

The objective of the research was to determine the cup yield of coffee, according to the roasting process of the caturra and bourbon varieties in three different times (8, 10 and 12 minutes), considering an initial sample entry temperature of 190°C and a final temperature for each time of (190ºC, 208ºC and 214ºC). The methodology used was a cross-sectional experimental type with a complementary randomized block design (DBCA), using the analysis of variance test (ANVA) and the Tukey comparison test at 5%. The results indicated that the bourbon variety is of better quality with a roasting time of 10 minutes and a cup yield of 84.23, while the caturra variety has the same roasting level, but a lower cup yield of 83.65, evaluated by two Q-Grader tasters from the INPROCAFE cooperative.
