The aim of the present work was to optimize the sensorial and technological features of ice cream. The experimental work was performed in two stages: 1) optimization of lactose enzymatic hydrolysis, and 2) optimization of the process and product. For the first stage a complete factorial design was developed, optimized using both response surface and the steepest ascent method. In the second stage a mixture design was performed, combining the process variables. The product with the best sensorial acceptance, high yield and low cost was selected. The acceptance of the product was developed by an untrained taster’s panel. As a main result the sensorial and technological features of the final product were improved, establishing the optimum parameters for its elaboration.

This study aims to design and validate a nutritional recipe for a snack made of Green Banana (Musa paradisiaca) Peel Flour (GBPF) and to assess the nutritional composition and microbiological quality of the flour. Banana peel, a food industry by-product, is a nutritious, low-cost material available for all year. Banana peel flower could be used as a functional ingredient due to its high fiber content and good functional properties. In general, university students have a deficient dietary fiber intake due to altered dietary patterns; thus, this study was focused on this population. Sapote gum (SG) is a new biopolymer with promissory functional properties. This study aimed to determine if SG is a suitable emulsifier for obtaining stable grape seed oil (GSO) emulsions. In the first stage, coarse emulsion concentrations of SG and grapeseed oil - GSO were evaluated, applying the Central Composite Rotational Design (0.59% to 3.41% of SG and 12.93% to 27.07% GSO). For the second stage, using a Centered Face Design – CFD, the resulting emulsion was sonicated at 90, 270, and 450 Watts at 5, 10, and 15 min. Finally, a validation was made. Emulsions were evaluated through microstructure, droplet size, kinetic stability, heat stress, and rheology. Sacha inchi Plukenetia huayllabambana oil (SIPHO) was co-microencapsulated, by spray drying using gum arabic as a coating material, with antioxidant extracts of camu camu (Myrciaria dubia (HBK) McVaugh) (CCSE) and mango (Mangifera indica) (MSE) skins obtained by ultrasound–microwave-assisted extraction (UMAE). The physicochemical characteristics of the microcapsules, such as, particle size, morphology, and moisture, as well as the encapsulation efficiency, the fatty acid composition, and oxidative stability, were determined in order to select the best formulation for the design of functional powdered beverages. The formulation with the highest amounts of ¿3 acids and polyphenols was used to prepare a functional powdered beverage that contained ¿3 (52.74%), antioxidant activity (324.80 mg AAE/100 g powder), and acceptable sensory attributes.

The Rietveld refinement method has taken high relevance since its creation. Nowadays, it is an useful tool in many fields of industry, materials science, and technology. For these reasons, it becomes a need for scientists and engineers whom pretend to use it for proper analysis of their materials. The aim of this study was to evaluate the effect of the genotype on the deposition curve of the chemical components and fatty acid profile of carcass of guinea pigs of Peru and Cieneguilla genotypes. Forty-eight male guinea pigs (24 per genotype), randomly distributed in pens with three animals each per genotype were used. Management and feeding protocols, up to 32 wk of age, were similar for both genotypes. The deposition curve of the chemical components was determined using the Gompertz equation. Data of the fatty acid profile were submitted to analysis of varianza under a Randomized Complete Block Design using the SAS Studio Environment software, with a significance level of α = 0.05. Purpose: The theoretical debate of corruption's impact on economic growth remains unsettled, making it an empirical question. This study aims to investigate corruption's effect on BRICS countries' economic growth. Design/methodology/approach: A panel dataset on BRICS countries spanning 1996 to 2020 was used. Bias-corrected estimators in small dynamic panels were employed to estimate a growth model as a linear-quadratic function of corruption that accounts for cross-sectional dependence, endogeneity and unobserved heterogeneity due to country and time-specific characteristics. Findings: The results indicate that corruption is detrimental to economic growth in BRICS countries; the quadratic relationship implies corruption is less prevalent in some countries than others. In the present work, two experimental designs were carried out to find the optimal conditions to manufacture nylon nanowires and to synthesize graphene. The results obtained were: 0.68 M (NH4)2SO4 and 11.45 V; and 27 kV, 2.3 mL / h and 11.40 cm as the distance from the needle to the collector, respectively. This way, nylon nanowires and graphene were produced, both of nanometric size. Using these materials, a nanowire/graphene composite was prepared using optimum manufacturing conditions. The materials obtained (nylon nanowires, graphene and composite) were characterized morphologically (SEM) and chemically (FTIR, UV), verifying their nanometric scale, functional groups and their UV blocking properties. The implementation of efficient grazing technologies in high mountain cattle ranches in the department of Nariño (Colombia) increases the sustainability of these production systems and promotes the conservation of the landscape design. With the objective of evaluating the dry matter intake of F1 (Kiwi-cross x Holstein) and Holstein cattle biotypes, present in hillside areas of the Nariño mountain, a preliminary trial of individual consumption of ryegrass (Lolium perenne) was carried out in Pasto (Nariño-Colombia) with the gauging technique, and the results were compared with models reported in the literature.
