The aim of this study was to evaluate the sedative effect of three products: valerian extract (Valeriana officinalis), benzocaine and tricaine methanesulfonate (MS-222) on stress levels produced by a simulated transport model in tilapia fingerlings. In a first part, the sedative dose of the products was determined based on the clinical characteristics that indicate depression of the central nervous system. In the second part, sedation and subsequent simulated transport for 3 hours were performed. The fish were euthanized, and blood samples were taken from the tail vein to determine cortisol (ELISA) and glucose (portable glucometer) levels, haematological parameters and mortality. Taenia solium develops into a sexually mature flatworm exclusively in the human gut; its eggs are excreted with the host´s feces, contaminating water, soil, and food. The evagination of the scolex from the ingested larval cyst and the consequent cellular proliferation are critical processes for the parasite´s development and growth into the adult form. Changes in the metabolism and glucose transport in proliferating tissues and during regeneration have been reported for other flatworm species. In T. solium, glucose transporters TGTP1 and TGTP2 have been identified, as well as a hypothetical SGLT1-like sodium-glucose cotransporter in an aberrant, hyperproliferative larval form. Se analizaron las características de una cepa de Bacillus amyloliquefaciens aislada del intestino de Arapaima gigas, seleccionada por su capacidad para generar inhibición de múltiples bacterias patógenas de peces, mediante el uso de herramientas moleculares como PCR y espectrometría de masas - MALDI TOF/TOF. The characteristics of a strain of Bacillus amyloliquefaciens isolated from the intestine of Arapaima gigas, selected for its ability to generate inhibition of multiple pathogenic bacteria of fishes were analyzed by using molecular tools such as PCR and mass spectrometry - MALDI TOF / TOFM. The results showed through PCR that this strain has key genes for the generation of antimicrobial peptides such as bmyB (bacillomycin L synthetase B), fenD (fengycin synthetase), srfAA (subunit 1 surfactin synthetase), bacA (bacilysin biosynthesis protein) and iturin (iturin A). The empirical use of alpaca rennet in the production of artisanal cheeses with cow’s milk is widespread in the high Andean communities of Perú and Bolivia, and has not been scientifically reported. The objective of the present study was to characterize alpaca rennet and evaluate its coagulating activity. Ready-to-use alpaca curds were collected directly from dairies in four neighborhoods of Viscapalca (Huancavelica-Perú, 4003 masl), which were transported under refrigeration and kept frozen at -20°C. The Crude Enzymatic Extract (CEE) was obtained by centrifugation at 560 x g for 10 min at 4°C, from which proteins were determined by Bradford, SDS-PAGE electrophoretic profile, coagulation time and proteolytic activity. The Free Radical Theory of Aging posits that reactive oxygen species (ROS), produced both endogenously and via environmental exposures, induce cumulative molecular damage to lipids, proteins, and DNA impacting cellular and tissue integrity. This oxidative stress contributes to age-related degenerative diseases such as cancer and Alzheimer’s. Although antioxidants (both endogenous enzymes and exogenous dietary compounds) offer protective mechanisms against ROS, empirical evidence on their efficacy in extending lifespan remains inconclusive, largely due to bioavailability challenges and systemic complexity. Los cambios post mortem que ocurren en el músculo del pescado son complejos y en corto tiempo. Durante el almacenamiento, las proteínas musculares pierden sus propiedades funcionales de acuerdo a su naturaleza y características bioquímicas intrínsecas, razón por la cual el presente estudio tiene como objetivos determinar el porcentaje de proteína de las fracciones: miofibrilar, sarcoplasmática, álcali-soluble y estroma, del músculo de “gamitana” Colossoma macropomun durante el almacenamiento en frío.
