This research focused on the synthesis of a functional alginate-based material via chemical modification processes with two steps: oxidation and reductive amination. In previous alginate functionalization with a target molecule such as cysteine, the starting material was purified and characterized by UV-Vis,1 H-NMR and HSQC. Additionally, the application of FT-IR techniques during each step of alginate functionalization was very useful, since new bands and spiked signals around the pyranose ring (1200–1000 cm−1) and anomeric region (1000–750 cm−1) region were identified by a second derivative. Purple corn (Zea mays L.) is a superfood native to Peru, highly regarded for its functional properties and commonly used in the preparation of traditional beverages and desserts, such as chicha morada and mazamorra morada. Following processing, the corn cobs remaining as a byproduct retain significant amounts of bioactive compounds with potential for utilization. This study proposes their use as a primary component in the production of teas. To ensure product safety, the moisture content, total ash, and counts of enterobacteria and aflatoxins in the raw materials were first evaluated. The current understanding of acid-base physiology states that all changes in the blood, pH, as well as variations in a healthy state and during disease occur through changes in 3 variables: (a) Carbon dioxide (CO2), (b) electrolyte relative concentration, and (c) weak acid concentration. Myrciaria dubia is an Amazonian fruit shrub that produces numerous bioactive phytochemicals, but is best known by its high L-ascorbic acid (AsA) content in fruits. Pronounced variation in AsA content has been observed both within and among individuals, but the genetic factors responsible for this variation are largely unknown. The goals of this research, therefore, were to assemble, characterize, and annotate the fruit transcriptome of M. dubia in order to reconstruct metabolic pathways and determine if multiple pathways contribute to AsA biosynthesis.RESULTS: In total 24,551,882 high-quality sequence reads were de novo assembled into 70,048 unigenes (mean length = 1150 bp, N50 = 1775 bp). The study of the complex ultracellular processes of nucleic acids is a subject debated as a scientific argument in favor of Intelligent Design (ID). The objective of this work was to analyze some molecular processes of the nucleic acids that suggest the confirmation of the ID theory, through the technique of documentary content analysis. First, the chemical structure of DNA and the combination of nitrogenous bases reflects that the genetic information of each created being is an original mixture of nitrogenous bases that makes each individual unique in the history of the world. Polyethylene terephthalate (PET) is a widely used material in container manufacturing, particularly in bottle production. It is characterized by its low cost and widespread availability. However, its improper disposal has significantly exacerbated global plastic pollution. For instance, less than 50% of plastic bottles are recycled. Moreover, studies indicate that this issue has led to a significant accumulation of plastic waste in the oceans, which continues to grow annually and could be considered floating islands of debris. Two commercial varieties of Peruvian Pouteria lucuma fruits namely “Seda” and “Beltrán” were characterized in terms of their physicochemical properties as well as their primary and secondary metabolites content and profile. Free sugars, dietary fiber, and starch comprise the main components in both varieties. Phenolic compounds derived from flavanoids (flavan-3-ols), gallic acid, and their derivatives were identified. Xanthophylls were tentatively identified based on their UV-vis spectra and enclosed the majority of the carotenoids found in lucuma. Additionally, both varieties showed to be sources of lipophilic compounds such as tocopherols (?, ?, and ?) and triterpenoids. Peruvian fava beans (PFB) are used in traditional cuisine as a nutrient-rich, flavorful, and textural ingredient; however, little is known about their industrial properties. This study evaluated the physicochemical, nutritional, and techno-functional characteristics of PFB varieties: Verde, Quelcao, and Peruanita. PFB exhibited distinct physical characteristics, quality parameters, and morphology. The color patterns of the seed coat and the hardness were the main parameters for distinguishing them. Nutritionally, all three samples exhibited high protein (23.88–24.88 g/100 g), with high proportion of essential amino acids, high dietary fiber (21.74–25.28 g/ 100 g), and mineral content. This research work focuses on the development of a plant-based mayonnaise (PBM) using Sacha Inchi seeds (Plukenetia huayllabambana) and chia seed mucilage (Salvia hispanica L.), in response to the growing demand for healthier alternatives to traditional mayonnaise. In response to the growing interest in non-dairy functional foods, this study aimed to develop a symbiotic beverage based on water kefir fermented with Andean plant-based substrates: black mashua, yacon, and spirulina. An extreme vertices mixture design was applied, maintaining constant levels of 12 % sucrose and 15 % kefir grains, to evaluate eight formulations. The variables analyzed included physicochemical parameters (pH, °Brix, titratable acidity), microbiological indicators (lactic acid bacteria count), and sensory attributes (odor, color, and taste). The present work reports the successful synthesis of a novel Pb2+ ion-imprinted polymer (Pb-IIP) based on a rhodizonate-like selective ligand by precipitation. Three functional monomers, namely acid acrylic (ACRY), 2-acrylamido-2-methylpropane sulfonic acid (AMPSA) and allylamine (ALLY), were chosen by computer simulation using density functional theory (DFT). The materials obtained were applied for the selective removal of Pb2+ from aqueous solutions and were characterized by Fourier transform Infra-red (FTIR), scanning electronic microscopy (SEM) and flame atomic absorption spectrometry (FAAS). The lacking of functional drinks of Amazonian fruits with health benefits was the reason for the elaboration of a functional drink based on Solanum sessiliflorum (cocona) with Stevia revaudiana (stevia) with the appropriate technological parameters and its respective file was proposed technique. The research was of a quantitative approach, of an experimental type, to carry out the project a totally randomized design was applied. Nine treatments were formulated, for which 3 equal volumes of cocona pulp of 500 ml each were made, 3 different amounts of water (500ml, 750ml, 1lt), and 3 different amounts of stevia (0.01%, 0.025%, 0.045%).
