The Pitahaya, commonly known as "dragon fruit", is a fruit originating in Central America and the Peruvian jungle whose fruit can be of different colors such as yellow, purple, red and white. This fruit has a high nutritional value, highlighting the content of ascorbic acid that is between 4-25 mg / 100g depending on its species, with the highest value being the red species. Pitahaya is a fruit with a high antioxidant capacity, even superior to that of other cacti, such as prickly pear. It presents bioactive compounds such as betalains; that favor stress-related disorders and have anti-inflammatory effects, it also has betanins and betacyanins; they are a source of natural dye. El presente trabajo de investigación tuvo como objetivo formular un extruido de grits de maíz (Zea mays) con harinas de quinua var. Pasankalla germinada (42h/20°C) y kiwicha var. Centenario germinada (63h/26°C) para conseguir apropiadas características tecnológicas, capacidad antioxidante, contenido de compuestos bioactivos y ácido fitico. Los ensayos se realizaron mediante un diseño de mezclas simplex-centroide y las variables dependientes se analizaron mediante una metodología de superficie de respuesta (P<0.10 y R2 >0.75). Los parámetros fijos en el uso del extrusor doble tornillo fueron el flujo de alimentación (6 kg/h), velocidad del tornillo (304 rpm), temperatura de siete zonas (30,45,55,75,95,105 y 115°C) y la matriz (5mm ϕ). Andean pseudocereals (APS) are becoming a trend as gluten-free grains with excellent nutritional and nutraceutical value. Cultivated under the extreme climate conditions of the Peruvian Andes, APS seeds are an excellent source of starch, fiber, proteins, minerals, vitamins, and bioactive compounds such as phenolic acids and flavonoids with antioxidant capacity that provide potential health benefits.
