Stevia, also known as "The miracle sweetener", is considered the best sugar substitute because it is up to 300 times sweeter and contains no calories. This shrub, grown in the forests of Brazil and Paraguay, has in its composition a high percentage of steviol glycosides (stevioside and rebaudioside A), which give it an intensely sweet taste and therapeutic properties against diabetes, hypertension and obesity also helps control weight, satiety and hunger. For its content in phenolic compounds, Stevia also acts as an excellent antioxidant and anticarcinogenic; also has been shown to have antibacterial, contraceptive, and diuretic properties. This review paper aims to collect information on the studies undertaken to stevia as an alternative to sugar and the benefits it provides consumption.

Chronic non-communicable diseases (NCD), such as cardiovascular diseases, diabetes, and cancer, dominate global mortality, besides compromising the quality of life. Unhealthy habits like sedentary lifestyles and poor diets escalate NCD risks. Conversely, the consumption of phenolic compounds and carotenoids has shown promise in reducing NCD risks. Pure, blends and enzymatically interesterified blends in different proportions of pracaxi oil/cupuassu fat (PC) and pracaxi oil/palm stearin (PS) (w/w) (40:60, 50:50, 60:40 and 70:30), were characterized. Samples with the greatest food interest (70:30 w/w PC and PS) were characterized by X-ray diffraction, optical microscopy, and DSC. β crystalline form was reduced in interesterified blends. Crystals in the blends showed stable polymorphic forms, whereas interesterified blends showed a reduction in β crystalline form, and crystals in α form. PC and PS blends with pracaxi oil (70:30 w/w) showed the best atherogenicity (AI) 0.21 and 0.34 and thrombogenicity (TI) 0.38 and 0.55 indexes, respectively. This study aimed to explore the perception and sensory acceptance of Purple Maize (PM) breakfast cereals by a Brazilian panel. The extrudates were elaborated using 25%, 50%, 75%, and 100% PM in a commercial yellow corn base. A total of 117 consumers evaluated samples through an acceptability test (nine-point hedonic scale) followed by CATA questions (35 descriptive terms) and a market research questionnaire. The cereals formulated with 50% and 75% PM had the best scores (6) in color, aroma, texture, and overall liking during the acceptability test. Based on the penalty-lift analysis, Brazilian consumers' most important drivers of preference were the attractive color, crispy texture, and the natural and innovative purple color. The article's objective was the implementation of the lean manufacturing methodology in the production process of an air conditioning metal processing plant. For this, the methodology of 2 phases was used. The company and its current operation, structure, products, and work plan are presented in the first phase, demonstrating its main deficiencies. In phase 2, an improvement plan was made with lean manufacturing tools applied to the deficit of phase 1. As a result of the implementation of these tools, 64%, 80%, 71% and 50% of space in the measuring, cutting, bending, and welding stations, respectively, and an improvement in production times were obtained. Based on the study results, it is concluded that the application of lean manufacturing benefited the company by drastically improving its production process and work environment.

Peruvian fava beans (PFB) are used in traditional cuisine as a nutrient-rich, flavorful, and textural ingredient; however, little is known about their industrial properties. This study evaluated the physicochemical, nutritional, and techno-functional characteristics of PFB varieties: Verde, Quelcao, and Peruanita. PFB exhibited distinct physical characteristics, quality parameters, and morphology. The color patterns of the seed coat and the hardness were the main parameters for distinguishing them. Nutritionally, all three samples exhibited high protein (23.88–24.88 g/100 g), with high proportion of essential amino acids, high dietary fiber (21.74–25.28 g/ 100 g), and mineral content. Andean pseudocereals (APS) are becoming a trend as gluten-free grains with excellent nutritional and nutraceutical value. Common wheat flour was replaced with four different percentages of HS: 5% (F1), 10% (F2), 15% (F3) and 20% (F4), these were compared with a control sample with 0% (F0) of HS. The technological characteristics evaluated were weight loss, water activity (Aw), instrumental color, bulk and texturometria samples, for 12 days. By contrast, marine oils such as fish oil crude (ACP) are characterized by their high content in omega-3. The objective of this research was to determine and compare the physicochemical of these three oils in order to establish which is the best for food use features. The acidity index, refractive index and specific gravity was determined by AOAC official methods, and the lifetime by the Rancimat method at three temperatures (100 °C, 120 °C and 150 °C), extrapolating the results at 25 °C.
