El objetivo de este trabajo fue optimizar la mezcla de grits de maíz (Zea mays), Harina de quinua (Chenopodium quinoa) y Harina de garbanzo (Cicer arietinum) para obtener un extruido que genere los mayores valores en la evaluación sensorial, características físicas y nutricionales para lo cual la granulometría con que se trabajó para el caso de los grits de Maíz fue el porcentaje retenido en la malla N° 60 y para la harina de quinua y garbanzo el % que pasa por la malla N°80. Así también se usó para esta investigación un diseño de mezclas de la metodología de respuestas los cuales tiene las siguientes formulaciones : F1 70:25:5, F2 55:40:5, F3 55:25:20, F4 63:32:5, F5 63:25:12, F6 55:33:12, F7 60:30:10,F8 65:27:8, F9 57:35:8, F10 57:28:15 de grits de maíz, harina de quinua y harina de garbanzo respectivamente. Stevia, also known as "The miracle sweetener", is considered the best sugar substitute because it is up to 300 times sweeter and contains no calories. This shrub, grown in the forests of Brazil and Paraguay, has in its composition a high percentage of steviol glycosides (stevioside and rebaudioside A), which give it an intensely sweet taste and therapeutic properties against diabetes, hypertension and obesity also helps control weight, satiety and hunger. For its content in phenolic compounds, Stevia also acts as an excellent antioxidant and anticarcinogenic; also has been shown to have antibacterial, contraceptive, and diuretic properties. This review paper aims to collect information on the studies undertaken to stevia as an alternative to sugar and the benefits it provides consumption.
