The current trend is to consume natural products with functional properties that reduce the risk of developing several types of diseases. One of the foods that meets these characteristics is mashua (Tropaeolum tuberosum), since it is an important source of bioactive compounds such as anthocyanins, glucosinolates and phenols. This feature is especially distinctive in purple and black mashuas compared to the yellow ones, because they have higher antioxidant capacity and are rich in phenolic compounds. The purpose of this research is to identify the active principles of black mashua, as well as to elaborate a mixed drink of mashua and pineapple (Golden variety) and to study the effect of the production process on the conservation of these active principles in the mixed drink.

Introduction: Tropaeolum tuberosum (mashua), is a member of the Tropaeolaceae family, is considered an ecological, millenary crop native in Peru, which began to be consumed in The Andes for having nutritional and medicinal properties. The objective of the present literature review is to highlight the importance of mashua as a source of diverse bioactives and to summarize its pharmacological activities. The method of the present study is a literature review, where original scientific articles on pharmacological activity and bioactive compounds of mashua were searched in the following electronic databases: PubMed, ScienceDirect and Google Scholar, published during the period 2019 to 2023. El objetivo del estudio fue determinar los compuestos bioactivos en la mashua (Tropaeolum tuberosun), proveniente de las alturas andinas de Perú. La cuantificación de estos compuestos se desarrolló mediante el método DPPH, (reactivo: 1,1 defini1-2-picril-hidrazilo), propuesto por Blois (1958); y también por otro método denominado ABTS (reactivo: ácido 2,2"-azino-bis-3-estibenzotrazolin-6-sulfonico); ambos se basan en métodos espectrométricos que han sido aplicados para medir la actividad antioxidante total de soluciones o sustancias puras o mezclas acuosas. Introduction: Tropaeolum tuberosum, known as "mashua" is an Andean tuber that holds both economic and nutritional value for low-income populations. It is believed that it affects male fertility because Andean men associate it with impotence and decreased fertility. Studies conducted on rats fed with "mashua" showed that there was a 45% decrease in the testosterone/dihydrotestosterone ratio. The effect of this plant on reproduction is related to its content of isothiocyanates, compounds that covalently bind to proteins, which may be directly or indirectly involved in the spermatogenic process. El objetivo de este trabajo fue determinar el cultivar de mashua que contenga mayor actividad antioxidante hidrofílica (AAH) entre: "kello", "yana ñawi", "zapallo amarillo" y "cheqchi" en estado fresco, evaluar el efecto de la temperatura de secado sobre la pérdida de AAH de la mashua seleccionado en el objetivo anterior y simular la curva y el tiempo del proceso de secado de la mashua.

In this work, we provided a Tropaeolum tuberosum hydroalcoholic extract to male mice (780 mg kg-1) for 7, 14 and 21 days treatment, there was no significant difference in body weight gain, testes, epididymides and prostate weight (p> 0.05), nevertheless progressive motility decreased and immobile sperm count increased significantly after 21 days treatment (p <0.05). The sperm count in the epididymis cauda decreased in the 3 three assessments, concentration on 21 days treatment was significantly lower than those of 7 and 14 days treatments (p <0.05). Our results suggest, that T. tuberosum has a direct action on the male reproductive system decreasing spermatic parameters without exerting toxic effects on mice.

El Instituto Nacional de Innovación Agraria (INIA), a través de la Dirección de Recursos Genéticos y Biotecnología, mantiene el banco de germoplasma que permite la conservación ex situ de 223 accesiones de mashua. Esa experiencia ha generado un conocimiento valioso en los profesionales dedicados a esa actividad, el mismo que es presentado en el presente documento denominado “Guía de manejo agronómico de la mashua para conservación ex situ”, el cual se pone a disposición de agricultores, estudiantes, profesionales, investigadores y todo el público interesado en conocer acerca de esta tuberosa andina.

Se evaluó el tipo de concentración; asistencia de microondas con refrigerante (60 watts por 15 minutos), con balón (60 watts por 7 minutos) y evaporación por estufa (30 °C por 30 minutos), los extractos concentrados se analizaron por el método pH diferencial. Aplicando un diseño completamente aleatorio donde antes de ser evaluado el ANOVA, se realizó las pruebas de Levene y Shapiro Willk para comprobar que se trata de una prueba paramétrica. En este trabajo de investigación se investigó la influencia de las condiciones atmosféricas de altura (3880m) de la cinética de secado de la mashua de espesores de 2,4 y 6 milímetros respectivamente utilizando un secador de bandeja tipo gabinete. Para esto monitoreamos las condiciones atmosféricas mediante equipos adecuados y ecuaciones de estado. Durante el secado hemos monitoreado la temperatura, humedad relativa del aire ambiente y del aire dentro del secador, asi como las humedades de la mashua durante todo el proceso de secado hasta una humedad de equilibrio (10%base seca). The objective of the study was to evaluate the antioxidant activity and use of ethanol extract of Tropaeolum tuberosum Ruiz & Pavón (mashua) as colorant for yogurt. The antioxidant activity was evaluated using DPPH and ABTS methods. The total content of anthocyanins (TA) and polyphenols (TP) was determined by the method of differential pH and Folin-Ciocalteu, respectively. Parameters of CIEL*a*b* system were used to measure the purple color and concentration of pigment used to color natural yogurt "3500", comparing with yogurt commercial blackberry "6224" which was taken as a reference. En el presente estudio se determinó el contenido de compuestos fenólicos y capacidad antioxidantes hidrofílica de dos variedades de mashua: Amarilla Zapallo y Negra, que fueron provenientes del distrito de Cullhuas, en tres estados: fresco, soleado (exposición al sol por 7 días) y cocido (mashuas Soleados y cocidas por 15 minutos). El análisis fisicoquímico realizado, varió notablemente entre el estado fresco, soleado y cocido, encontrándose un aumento de los componentes en el estado soleado en las dos variedades. En cuanto al pH de las dos variedades aumentaron luego del soleado y la cocción, a diferencia de la acidez titulable que disminuyó. El objetivo del presente trabajo de investigación fue determinar la actividad antioxidante del extracto etanólico de Tropaeolum tuberosum Ruíz & Pavón, mashua negra. Los tubérculos de mashua negra fueron recolectados en la provincia de Huamanga, distrito de Ayacucho, cultivado a 2,760 m.s.n.m. de altitud. Se preparó el extracto etanólico mediante maceración durante una semana. La marcha fitoquímica realizada al extracto demostró la presencia de flavonoides, antocianinas, carbohidratos, alcaloides, taninos y compuestos fenólicos.
