Esta tesis tiene el propósito de establecer la relación entre la conciencia ambiental y las sumillas de asignaturas en la formación de estudiantes de las carreras de ingeniería de una universidad pública y privada de la región Tacna, en la búsqueda de determinar si la conciencia ambiental, entendida como un sistema de vivencias, conocimientos y experiencias que los estudiantes utilizan activamente en su relación con el medio ambiente, se contrastó si eran producto de la formación que reciben. El tipo de investigación utilizada fue un diseño descriptivo de corte transversal; con una muestra de 356 estudiantes de las carreras de ingeniería provenientes de la Universidad Nacional Jorge Basadre Grohmann (58 %) y Universidad Privada de Tacna (42 %). Con el objetivo de evaluar la sustentabilidad ambiental de la actividad olivícola en el agroecosistema del distrito La Yarada - Los Palos, Tacna, se realizaron diversas etapas. En primer lugar, se seleccionaron, priorizaron y diagnosticaron los indicadores más relevantes para evaluar la sustentabilidad, clasificándolos en dimensiones ambientales, sociales y económicas. Para la priorización de los indicadores, se utilizó un Proceso Analítico Jerárquico (AHP) con la participación de 12 expertos. Además, se empleó un cuestionario con preguntas estructuradas, aplicado a una muestra no probabilística de 61 propietarios de unidades productivas, para analizar los indicadores. The objective of the research was to estimate the relationship between changes in eating habits and emotional well-being of engineering college students at the Private University of Tacna during mandatory confinement due to COVID-19. The study was descriptive cross-sectional with a sample from 195 participants, two instruments were used; the psychometric scale of depression, anxiety and stress (DASS-21) and an instrument to measure eating habits that were validated by presenting an internal consistency value of α = 0.937 and 0.826 respectively. The main objective was to evaluate the influence of the temperature and velocity of air in the time of dehydration. The raw material was characterized based on the norms of the AOAC, reporting 94,5% of humidity, 3,94 pH; 4,5 ° Brix and 0,93% titratable acidity expressed in citric acid. The research work was aimed evaluate the sensory characteristics and shelf life of aromatic tea made from plantain (Plantago major L), cinnamon (Cinnamomum verum) and subtle lemon (Citrus aurantifolia swingle). To obtain the results, physicochemical parameters such as humidity and ash were evaluated. Microbiological analyzes were also carried out, such as: Mesophilic Aerobics and Total Coliforms; for the sensory evaluation, the consumers evaluated six treatments of different concentrations, where it was evaluated: Odor, taste, color and general appearance applied to thirty judges. The objective of the research was to determine the perceived value of the consumers of picante a la tacneña with respect to its endogenous and exogenous attributes. The study was based on the theory of perceived value using a multidimensional scale of 16 items. The type of research was a cross-sectional descriptive correlational design. The survey technique was used to collect the information, and the instrument used was a 7-level Likert-type questionnaire. Para establecer la relación del nivel de precios, la valoración de beneficios y factores asociados sobre el consumo de productos orgánicos en la ciudad de Tacna, se tuvo que medir los bajos niveles de consumo; el nivel de conocimiento, el nivel de precios, la valoración de beneficios, y el probable efecto de la pandemia COVID 19. The objective of the study was to determine the effects of Covid-19 isolation and its relationship to eating habits in two districts of the Tacna region in 2020, identifying the effects on food, food consumption, involuntary food search, food behavior and emotional health of the population. The methodology is non-experimental, transverse, the population studied was composed of settlers from the district of Tacna (urban area) and the district of Locumba (rural area), determining probabilistic samples of 386 and 300 respectively, between the ages of 18 to 64 years. The research aimed to identify changes in hygiene habits and impacts on food security in a rural and urban population in isolation by Covid 19 in the Tacna region. The research was non-experimental and cross-cutting the survey was used as a technique, applying a questionnaire to populations aged 18 to 65, from provinces of Candarave representing the rural area and the province of Tacna classified as urban. Pearson's Chi-square statistic was applied for data analysis. The results show significant and positive changes in hygiene habits in food handling that is more noticeable in urban areas than in rural areas, while negative impacts on food security are more evident in rural areas than in urban areas. It is therefore concluded that there were significant impacts as a result of Covid 19 confinement on hygiene habits and food safety.
