The processing of coffee for consumption in cafeterias generates significant amounts of waste, mainly coffee husks that, when roasted, ground and passed through coffee machines, generate spent coffee. The problem found is that there is no adequate management of this waste, nor are the waste generated quantified. This research seeks to identify alternatives to solve this problem. The research has an exploratory scope, using a survey with a convenience sample of 18 coffee shops, to obtain information about the interest in participating in a coffee waste collection model. Likewise, a cluster model was used to identify the best way to collect waste, for this the location of 72 cafeterias in the study area was determined. As a result, it is concluded that there is interest in the reuse of spent coffee by applying an appropriate waste collection model by conglomerates.

Coffee is the most consumed product in the world, including European countries. In this sense, the main objective of this article was to analyse the competitive evolution of Peruvian coffee exports. The data were collected from 2011 to 2020 and were obtained from Sunat-Customs Operations and Trade Map (Trade Intelligence Pages). The analysis was carried out by generating graphs and tables, using minitab 17 Spanish version software. The main destination of parchment coffee was Germany with 46749 tonnes, USA with 53113 tonnes and Belgium with 18445 tonnes. For decaffeinated unroasted coffee beans, the main importer was Germany with 162.47 tonnes. The main importer of decaffeinated roasted coffee was Chile (543.57 tonnes). However, it is noted that exportable parchment coffee from 2011 to 2020 is decreasing by 83,133 tonnes.

The biosorption of heavy metals is the property of some types of biomass, a process that captures or accumulates metal ions, allowing their removal or immobilization. The coffee sector in Peru faces significant challenges, since more than 50% of the coffee consumed domestically is imported, and is predominantly in soluble forms (Cafelab.pe, 2024). Every year, 750,000 tonnes of waste coffee brushwood are dumped in the jungle of the Junín region of Peru. The purpose of this study is to promote a circular economy and mitigate the environmental impact. This article focused on the design of a crushing machine adapted to the needs of local small farmers in the central jungle. The design process was based on the VDI 2221 (Guidelines of the German Association of Engineers 2221) methodology, focused on finding effective solutions to facilitate the generation of organic compost. Detailed calculations of the key elements of the machine were carried out, complemented with CAD (Computer Aided Design) simulations such as SolidWorks and Altair EDEM, to evaluate stress resistance and the pressure required to crush the coffee brush. 57 samples of 500 g of coffee were evaluated to compare the quality of coffee cup, in the rural sectors of the San Juan del Oro areas in Sandia - Puno and Apollo in Franz Tamayo - La Paz. Both production areas are located in an ecological floor that varies between 1300 to 1400 msnm, this being an important factor, since high-quality coffee is obtained at more than 1200 msnm. For the evaluation of the samples in each production area of San Juan del Oro and Apollo, two samples (500g each) were made, first at 10% and second at 30% of the best samples for the evaluation of mixtures or blends. In addition, the drying process is an essential factor that influences the final quality of the product, in this sense, the objective of this article was to estimate the humidity of parchment coffee by using an automated solar dryer, using mathematical models. The models used were multiple linear regression and nonlinear regression, the same as those determined with the R and Curve Expert Professional software respectively.
