The aim of this research was to develop gluten-free (GF) and egg-free quinoa pasta with high nutritional value. Extruded and non-extruded quinoa (red and white) flour, potato starch, tara gum, and potato, pea and rice protein isolates were investigated in different recipes, some of them included egg white as an initial reference point. Results showed that extruded quinoa flour, potato starch and tara gum had deteriorating effects on GF and egg-free pasta firmness and cooking quality. Lupine flour addition itself was not able to replace egg white when added in the same amounts, but after increasing the concentration to 12%, the firmness and cooking quality decreasing effects could be improved again, especially when tara gum was absent in the formulations. In the final recipe, the content of lupine flour was increased to 30% because its protein is complementary to the quinoa protein. From ...

The problem of morbidity and mortality of guinea pigs in a farm in the province of Trujillo, La Libertad region, is described. Due to vitamin C levels, blood and lesions, a deficiency of vitamin C was diagnosed and therefore alfalfa ad libitum was supplemented during 21 days in four animals on days 0, 1, 7, 14 and 21 of the supplementations. The increase in blood ascorbic acid levels was observed from the first day of the supplementation and its normalization at the end of the evaluation period. Moreover, the complete recovery of body condition in the evaluated animals.

The study assessed the prevalence of porcine cysticercosis in three villages (IslaNoblecilla, Tutumo and Nuevo Progreso) from Matapalo district, in Tumbes, Peru. Allpigs excepting pregnant sows and piglets younger than two-months old were censusedand ear-tagged, and a blood sample was collected. Antibodies against T. solium weredetermined in serum samples using the Enzime linked Immuno Electro Transfer BlotAssay (EITB). Some risk factors associated with the presence of antibodies againstCysticercus cellulosae were estimated. The total prevalence was 26% (139/534). Prevalencerates were 85/236 (36%), 45/276 (16%) and 9/22 (41%) for Nuevo Progreso, Tutumo andIsla Noblecilla respectively. Variables associated with presence of antibodies were village(P = 0.005) and age (P < 0.001). Information on the number of reaction bands in the EITBassay was used to predict the actual prevalence of T. ...

Hepatitis C virus (HCV) has high genomic variability and, since its discovery, at least six different types and an increasing number of sub-types have been reported. There is not knowledge about the degree of genetic variation among HCV strains circulating in the Andean region of South America. In order to study the degree of genetic variability of strains isolated at the HNERM, in this preliminary study it was obtained the sequences from the 5’ non coding region (5’ NCR) belonging to 12 patients and were reported to the GenBank obtaining the accession identifications.

Objective: The main objective is to determine the normal physiological values of heart rate, respiratory rate, oxygen saturation, blood pressure, and hematocrit in populations living at altitudes between 1,000 and 3,500 meters above sea level in the Cajamarca Region during the year 2023. Methods: The study design was a descriptive observational cross-sectional study with a non-probabilistic sampling method. Inclusion criteria considered inhabitants aged 1 to 70 years, of both sexes, both native and non-native, who had resided for more than one year at the measured altitude and agreed to participate by signing the informed consent form. In the case of minors, consent was obtained from their parents. Exclusion criteria included a history of cardiovascular, pulmonary, or hematological disease; presence of respiratory symptoms at the time of the test such as cough, sputum, or dyspnea; diagno...

Background: The ongoing coronavirus 2019 disease (COVID-19) pandemic strained medical systems worldwide. We report on the impact on pediatric oncology care in Latin American (LATAM) during its first year. Method: Four cross-sectional surveys were electronically distributed among pediatric onco-hematologists in April/June/October 2020, and April/2021 through the Latin American Society of Pediatric Oncology (SLAOP) email list and St Jude Global regional partners. Results: Four hundred fifty-three pediatric onco-hematologists from 20 countries responded to the first survey, with subsequent surveys response rates above 85%. More than 95% of participants reported that treatment continued without interruption for new and active ongoing patients, though with disruptions in treatment availability. During the first three surveys, respondents reported suspensions of outpatient procedures (54.2%), ...
