The chemical composition and apparent digestibility of nutrients of the solid-state fermentation (SSF) of waste taro tubers (Colocasia esculenta (L) Schott) inoculated with natural yogurt fed to growing pigs was determined. Dry matter (DM), organic matter (OM), crude protein (CP), crude fibre (CF), ash, ether extract (EE), nitrogen-free extracts (NFE) and gross energy (GE) were determined. For the study of apparent digestibility of the MS, MO, CP, CF, NFE and GE, 12 castrated Landrace x Duroc x Pietrain male pigs of 25 ± 2 kg were used, distributed in three groups with four animals each and fed with diets containing 0, 10, and 20% of SSF (T0, T10 and T20, respectively). Basic knowledge on solid state fermentation and on biofilm formation is summarized and related to cell adhesion processes. These subjects are covered from the engineering and molecular biology points of view. Contrary to the common believe, the advantages of solid state fermentation are related to the adhesion of fungi to solid particles instead of being due to the low water content. Thus, solid state fermentation and biofilm fermentation (erroneously known as adsorption immobilization) are technical variants of the same biological process, and should be referred as Surface Adhesion Fermentation.

The aim of this study was to evaluate the crude protein (CP) and true protein (TP) content of sugarcane after the solid-state fermentation process (SSF) with and without addition of urea or an inoculum of Pediococcus acidilactici, Lindner. Nine aerobic silos were used where three treatments were evaluated: ground whole cane (GWC), GWC plus 2% urea (GWCu) and GWC inoculated with 108 CFU of P. acidilactici (GWClab). pH, CP and TP levels were measured, as well as changes in the microbial populations. The pH was higher than 6.1, except for GWCu where it was lower (5.6; p<0.05). The amounts of CP and TP were low, without differences between treatments until the end of the incubation period (72 h). Dragon fruit juice from three variety (red, pink, and white) were evaluated in pH, total soluble solids, titratable acidity, color, phenolic compounds, antioxidant capacity, while in fermented dragon fruit juice with Saccharomyces cerevisiae were also evaluated the mesophylls and yeasts plus molds, and alcohol grade. The contents of total soluble solids and pH decreased in the fermented juice of all varieties as consequence of the fermentation process. The phenolic compounds were higher in the red dragon fruit juice, followed by the pink and white dragon fruit with average values of 45.3, 32.1 y 24.6 mg of Gallic acid/100 mL of juice, respectively. Therefore, the antioxidant activity was higher in the red dragon fruit juice (160.84 mg of Trolox/100 mL of juice). Worldwide more than 7 billion tons of lignocellulosic biomass will be produced by 2025. In Colombia, these residues are mainly disposed of in rivers and open fields, and only 10% is reused and recycled. Non-centrifugal sugarcane bagasse (SCB) is a residue obtained after sugarcane juice extraction during the manufacturing process of panela and is mostly used as fuel for boilers at sugar mills. Wheat bran (WB) is the main waste from wheat flour production. Nonetheless, the chemical composition of these by-products makes them suitable for use as substrates for hemicellulolytic enzyme production from fungi. Hydrodynamic cavitation (HC) was adopted to assist alkaline-hydrogen peroxide pretreatment of sugarcane bagasse (SCB). In the following condition: 0.29 M of NaOH, 0.78% (v/v) of H2O2, 9.95 min of process time and 3 bar of inlet pressure, 95.4% of digestibility of cellulosic fraction was achieved. To take the best use of the pretreated biomass, the overall process was intensified by way of employing a packed bed flow-through column reactor and thus enabling to handle a high solid loading of 20%, thereby leading to cellulose and hemicellulose conversions to 74.7% and 75%, respectively. El presente trabajo de investigación busca contribuir en la diversificación del uso de Sacha Inchi, una planta nativa de la Amazonía con alto valor nutricional y como alimento funcional por su aporte ácidos grasos esenciales como la omegas 3 y 6, que ayudan a disminuir el colesterol malo y su beneficio para mantener un sistema cardiovascular saludable. Our research principal aim is to produce red dry wine using dry active yeast Saccharomyces cerevisiae r.f. cerevisae, cultivated in unfermented juice (must) of grapes called "Borgoña Negra" (Vitis labrusca), which is the only variety of grapes cultivated in the San Martin region, PERU, South America. In our experiment research we used unfermented juice of the mentioned grapes to level of 20ºBrix, 23ºBrix and 26ºBrix of sugar concer:ttration which was obtained adding granulated white sugar. During the fermentation process we checked the "yeast" at different temperature levels of 20º C, 25ºC and environment temperature, also, during 30 days. Los granos de cacao son altamente comercializados a nivel mundial, ya que es la materia prima en la industria del chocolate. Uno de los procesos más importantes por los que pasan los granos de cacao es la fermentación.
