The objective of the research was to determine the cup yield of coffee, according to the roasting process of the caturra and bourbon varieties in three different times (8, 10 and 12 minutes), considering an initial sample entry temperature of 190°C and a final temperature for each time of (190ºC, 208ºC and 214ºC). The methodology used was a cross-sectional experimental type with a complementary randomized block design (DBCA), using the analysis of variance test (ANVA) and the Tukey comparison test at 5%. The results indicated that the bourbon variety is of better quality with a roasting time of 10 minutes and a cup yield of 84.23, while the caturra variety has the same roasting level, but a lower cup yield of 83.65, evaluated by two Q-Grader tasters from the INPROCAFE cooperative. Cocoa beans are the main raw material for the manufacture of chocolate and are currently gaining great importance due to their antioxidant potential attributed to the total phenolic content (TPC) and the monomeric flavan-3-ols (epicatechin and catechin). The objective of this study was to determine the degradation kinetics parameters of TPC, epicatechin, and catechin during the roasting process of Criollo cocoa for 10, 20, 30, 40, and 50 min at 90, 110, 130, 150, 170, 190, and 200 °C. The results showed a lower degradation of TPC (10.98 ± 6.04%) and epicatechin (8.05 ± 3.01%) at 130 °C and 10 min of roasting, while a total degradation of epicatechin and a 92.29 ± 0.06% degradation of TPC was obtained at 200 °C and 50 min. La arsenopirita, FeAsS, es un mineral que se encuentra frecuentemente en asociación con oro. En este tipo de mineral, el oro se suele encontrar en forma sub-microscópica, encapsulado en la matriz del mismo mineral, o bien constituyendo una solución sólida, lo cual dificulta o impide la recuperación del oro mediante las técnicas disponibles de lixiviación. Asimismo, es considerado uno de los principales exportadores de Zinc a nivel de América; no obstante, la principal problemática del sector minero es el bajo uso de capacidad instalada con un promedio nacional de 84.31%. El presente trabajo de investigación busca determinar la factibilidad en la instalación de una planta procesadora de café molido gourmet en el Perú. Para establecer la factibilidad del proyecto se realizó un exhaustivo estudio de mercado, se determinó el proceso productivo y se evaluó la inversión, costos y presupuestos del estudio. El producto ofrecido es una bebida energética con gran potencial en el mercado peruano, la cual permite reducir medidas corporales y aumentar la fuerza y vitalidad física. El mercado objetivo está conformado por adultos pertenecientes a los niveles socioeconómicos A y B, que residen en Lima Metropolitana y tienen la particularidad de consumir café molido, regularmente. The present research project evaluates the pre-feasibility of the installation of a pecan cream with honey production plant. This product contains many beneficial properties for health, which makes it attractive to the market. Pecan cream will be segmented to the public that belongs to socioeconomic level A, B and C1 who are 18 years old and older and who reside in zone 7 and 8 of Metropolitan Lima. With the results of the 392 surveys, it was found that 85,80% would be willing to buy the product and 74,50% of purchase’s intention. For the percentage of market share, the result is 63,92%. With the previous information, the demand for the first year of the project was determined to be 28 336,93 kg, equivalent to 141 685 bottles. En la presente investigación se elaboró un estudio de prefactibilidad para la instalación de una planta procesadora de café (coffea arábica) tostado y molido en sacos filtrantes. Ante un consumo de café cada vez mayor en Perú, el café se puede dividir en dos grandes grupos, el café instantáneo y el café molido.
