The present paper analyzes one of the contributions of the new Peruvian criminal procedure model: procedural speed. The new norm must respect both the principle of celerity and the right to defense, and in that sense, it must harmonize both. The body in charge of speeding up the process is the Public Ministry, since it has the power to decide whether or not to initiate the process and determine the strategy to be followed: direct accusation, the immediate process, the process of early termination, among others. Los Guayachos Restaurant y Servicios Generales S.A.C., ubicado en Chachapoyas y dedicado a la cocina tradicional amazónica, presenta una problemática operativa que afecta de forma directa el control de inventarios. Se evidencia la falta de procedimientos claros en compras, recepción, almacenamiento y rotación de insumos, situación que deriva en sobrestock, mermas y caducidades. The present investigation evaluates the feasibility of implementing a plant producing a yacon-based supplement in powder form, which aims to improve the quality of life of its consumers thanks to its regulatory functions. The market study was carried out in the socioeconomic status A, B and C of zones 6 and 7 of metropolitan Lima to determine the specific demand of the project.
