This study analyzes the potential of 12 seeds from the Peruvian region as by-products of fruit processing, presenting them as a sustainable alternative for waste reduction and the valorization of bioactive compounds. The objective of this work was to quantify either physical and chemical attributes of the whole along with grounded seeds from Castilla pumpkin (Cucurbita moschata Duchesne) and bitter pumpkin (Apodanthera undulata A. Grey). The parameters data for whole seeds of both pumpkin varieties were; physical dimensions, internal friction, external friction and particle size, while for their ground compound were; electric conductivity, soluble protein, total protein, carbohydrates, oil concentration and main minerals. In this paper, the technical, financial and legal feasibility of employing solar cogeneration for the food industry sector in Peru will be demonstrated. In consequence, we will quantify the electric and thermal energy obtained from a conventional Rankine cycle, with the particularity that the water used to condense the steam that exits the turbine will be employed for the required processes in the industrial plants, because of the high temperature obtained from the heat exchange with the steam. In the camu camu (Myrciaria dubia) processing, the peels and seeds are the main residues with a high potential for use as they contain anthocyanins (peel) and phenolic compounds. The objective of this research was to take advantage of camu camu peels and seeds as ingredients for infusion filters, and to evaluate the effect of drying. First, the peels and seeds were dehydrated at three temperatures (50, 65 and 70°C) and characterized in total anthocyanins and total phenolic compounds. Then, they were sieved considering two size ranges: small (between 0.1 and 0.475 cm) and large (larger than 0.475 cm) to be evaluated sensorially by a trained panel as an infusion, using a hedonic scale of general acceptability of 10 cm. La pitajaya (Selenicereus megalanthus) es una fruta exótica que se encuentra en las selvas amazónicas, en el caso de Perú, se encuentra con mayor frecuencia en la selva alta. Se caracteriza por tener alto contenido de vitamina C y antioxidantes, lo que la hace apetecible de ser comercializada. Respecto a su procesamiento, este debe ser realizado cerca a la fuente de materias primas, para reducir los costos que se generen. Por el tipo de fruta, no cabe duda que ya procesado puede ser considerado una oportunidad para los pueblos amazónicos eleven su nivel de vida comercializando la pitajaya.

The global consumption of ultra-processed foods (UPF) has experienced a rapid increase, particularly in developed urban environments. This trend has been associated with a rise in the prevalence of non-communicable diseases, suggesting potential risks to human health. Therefore, the study aimed to analyze trends and models of scientific production related to UPF and public health. To conduct the research, 139 documents were gathered from the Scopus database, using keywords such as "ultra-processed food" and "public health." Data were processed using VosViewer and Bibliometrix software to create cienciometric map networks. Peasant agriculture and its agrobiodiversity systems are at a juncture in which two global processes impose significant challenges for their sustainability: climate change and the expansion of agricultural biotechnology supported by a regimen of intellectual property rights over plant genetic resources. In this article, I explore some potential risks these global processes impose on peasant agriculture, particularly on their seed systems. In Peru, chicken is one of the most consumed foods in all regions. Due to the constant increase in population,chicken production is increasing in the country. For this reason, a food company must improve its efficiency to satisfy more customers and reduce its costs per productive unit without reducing its quality. The research can be useful to canning companies as well as companies where their machines suffer from many failures within production due to a lack of maintenance planning and worker training. The model used is based on two methodologies: 5S and TPM. These methodologies reduced the total production time per batch by 8% and improved the utilization rate by 7 percentage points. The use of these tools helped reduce corrective maintenance time and standardize processes to avoid recurring equipment failures.

The research aimed to determine potential effects on the introduction of the “octagon” based consumer warning system on the consumption of processed foods that are excessive in nutrients. The research is non-experimental and cross-sectional. The survey was used as a technique, applying a questionnaire to the population aged 15 to 64 from the five most populated districts of the province of Tacna: Colonel Gregorio Albarracín, Tacna, Alto de la Alianza , Ciudad Nueva and Pocollay. Among these changes are the measures adopted by the judiciary to continue protecting rights and to continue with «normality» in its own work. This article comments on Directive No. 007-2020-CE-PJ approved by Administrative Resolution of the Executive Council of the Judiciary No. 000167-2020-CE-PJ, which implemented the «Simplified and Virtual Process of Food for Children and Adolescents». Indeed, it will be analyzed its main scopes and relevant modifications with regards to the traditional process. Likewise, the experience of the Superior Court of Justice of La Libertad with respect to the implementation of the virtual form of food demand will be taken into consideration.
