Lucuma is a fruit that is experiencing a growing trend in commercial ground into flour for use in the food industry. This study aimed to obtain lucuma flour using the method of refractive window drying and evaluate the effect of the thickness of lucuma pulp and drying time on flour moisture and color. It was used a Composite Design Central Rotary (DCCR) with time between 10 and 50 min and the thickness between 1 and 3 mm. A fixed temperature of 95 °C and mylar film (metallized polyethylene terephthalate) as a refractory film of 0.1 mm was used. It was determined that the optimal conditions for lucuma flour (9.8% moisture) with this technique is when the thickness was 1.3 mm and with a time of 15 minutes; in these conditions, the effective diffusivity of water is 2.53 E-7 m2/s.

The transaction costs faced by Peruvian exporters are much higher than those faced by exporters from other Latin American countries. En este trabajo de investigación se desarrolló el testeo de las vulnerabilidades existentes en el sistema operativo de los equipos de cómputo de una red, para lo cual se usó la herramienta Metasploit, incluida en la distribución GNU/LINUX BackTrack 5R3. Se realizaron pruebas en una red doméstica y la primera fue con un host con sistema operativo Windows versión 7, y teniendo éste el firewall y antivirus activados. Se elaboró una propuesta de mejora para el proceso del estudio, que consiste en ocultar el archivo exploit, generado (exploit.exe) en otro archivo que no pueda ser detectado por el antivirus de la víctima, ya que al momento de ser enviado este es eliminado. Al finalizar las pruebas se obtuvo el control total de un host con sistema operativo Windows XP o Windows 7 que se encuentre en la misma red implementada para las pruebas.

The objective of this work is the analysis of the sea surface temperature (SST), estimating of the NOAA / AVHRR data, near the Peruvian coast for their application in the determination of the thermal fronts and in the study of El Niño phenomenon.
