The aromatherapy product industry uses essential oils with aromatic-medicinal properties, including Satureja sericea, which is used in Chota as a rub and/or vaporization for muscular pain. The objective of the study was to determine the yield and physicochemical characteristics of the essential oil (EO) of rosemary for better agro-industrial utilization. To this end, tender branches in flowering were collected in the community of Colpamatara, Chota-Cajamarca province, which underwent partial dehydration at room temperature under shade. It was found that the extractive yield was 0.24% w/v, relative density 0.92 g/cm3, refractive index of 1.37, and the antioxidant activity was 74.74%. Technical parameters of interest for industrial processing were determined; however, it is necessary to determine quality parameters of the chemical compounds that validate their medicinal properties.
