The purpose of the research was to determinate proximal composition and functional properties of the giant squid freeze-dried surimi (Dosidicus gigas). Surimi elaborated from giant squid and it lyophilized until obtaining surimi powder to evaluate its characteristics and functional properties. The protein content was 58.7% and carbohydrate 30.5%. Protein solubility in water and salt (3%) were 21.1% and 40.6% respectively, these values being higher than surimi powder of commercial species. The gelling capacity was 2.4% and the emulsifying capacity was 79.9% at a concentration of 1.0%. The color on the Hunter scale was L*: 91.5; a*: 0.5; b*: 7.0. Giant squid powder surimi considered as a functional protein powder due to its percentage protein content, and had good technological characteristics and great potential in the food industry.

El propósito de la investigación fue determinar la composición proximal y propiedades funcionales del surimi liofilizado de calamar gigante (Dosidicus gigas). The determination of phenolic compounds and antioxidant activity of grape pomace (Vitis vinifera) of two varieties: Quebranta (red) and Torontel (white) using two drying methods: freeze drying and cool air-drying was evaluated, using methods to preserve and maintain bioactive compounds like polyphenols and their antioxidant capacity, these are DPPH and FRAP assays. In general, according to solvent extraction for both grape pomace varieties using the two drying methods, there were obtained high contents of extractable, hydrolysable and condensed tannins polyphenols and therefore exhibited high antioxidants capacities. Edible films were elaborated from gelatin solutions (4% w/v) of mahi-mahi skin (Coryphaena hippurus) with 2,5; 5; 7,5 and 10% v/v of oregano extract (OE) and its physicochemical, antimicrobial, structural and surface properties were determined. The control and with 2.5% OE films showed the lowest moisture and opacity values ​​and the highest viscosity values. All films with OE inhibited the growth of Staphylococcus aureus and Proteus vulgaris. Alone films with 10% OE showed antimicrobial activity against all the strains evaluated. Giant squid adults of both sexes were used in different seasons. Grounded meat of each one were used to determine proximate composition, ammoniacal nitrogen, trimethyl amine contents, and viscosity. Simultaneously, surimi was prepared from each specimen to measure its gel strength. The moisture and protein values were between 81.2–86.9 and 10.5–16.4% respectively. They showed significant variations during summer in both sexes. The moisture: protein ratio was significantly lower in summer, showing greater variabilityamong males. When protein is transformed to a dry basis, differences between sexes are observed in winter and spring. Ammonia nitrogen was about 310.0 mg% and trimethylamine content was below 3.0 mg%. The apparent viscosity and gel strength values were significantly lower during winter, presenting males the lowest average values.

The aim of this work was to optimize the conditions for gelatine extraction from mahi-mahi (Coryphaena hippurus) skin using a five-level central composite design using the response surface methodology. The effects of extraction temperature (40-70 °C), extraction time (60-400 min), and citric acid concentration (0.1-0.9%) on gel strength (g) and protein yield (%) were evaluated. The optimal extraction conditions were 56.8 °C, 331 min and 0.26% citric acid. The experimental values of the responses were 387 ± 4.5 g gel strength and 20.4 ± 0.08% protein yield. The gelatine obtained was characterized and the results showed a high protein content (88.3%) and low ash content (1.0%). The main amino acid was glycine (20.9%) and the content of imino acids (proline and hydroxyproline) was 18.7%, while the content of essential amino acids was 22.35 g/100 g of protein. In the fishmeal industry, seawater is used to transport fish to the factories. Due to this, “pumping water” with high concentrations of organic matter is generated that is treated via chemical coagulation before letting it into the sea. The objective of this study is to characterize and compare the sludge obtained from conventional chemical coagulation and the sludge from the electrocoagulation process. A pilot electrocoagulation plant was built next to a chemical coagulation plant. The sludge obtained from both methodologies was analyzed for its proximal composition, its iron and aluminum content, and the fatty acid profile in its contained fat. Electrocoagulation was found to produce sludge with a higher concentration of lipids and ash, which indirectly confirmed that it removes more organic pollutants and salts than chemical coagulation.
