Vinegar has been elaborated from apple juice by inmersed fermentation at room temperature. The process was developed in two stages, firstly, the alcoholic termentation was carried out using Saccharomyces Cerevísíae yeast, Ellipsoideus variety. Secondly, an acetic fermentation was carried out using acetobacter. The global yield of the process, based on row material usage was around 52%. The product obtained has an acidity of 6,8% in acetic acid and fulfill the market requirements.

The aim of this study was to isolate and characterize phenotypically and molecularly the pathogen Edwardsiella anguillarum, as well as to determine the anatomo-histopathological lesions in tilapia (Oreochromis niloticus) cultivated with biofloc technology in the northern area of Lima, Peru. Five isolated bacterial strains were isolated and characterized by conventional biochemical techniques and by the API 20E system. E. anguillarum was identified from internal organs using biochemical and molecular techniques. The most frequent external clinical signs were bilateral exophthalmia, erythema in the pectoral fins and around the anus. Internally, whitish nodules in the heart and liver were observed. The histopathological study revealed necrosis in the branchial lamellae, spleen, intestine, posterior kidney and gonad, as well as the presence of an inflammatory reaction of granulomatous type i...

It presents a model based on the Rayleigh equation to simulate the production of pisco using a batch distillation column packed stainless steel without reflux from grape quebranta of valley of Cañete. Model results are compared with experimental data. The results show that the proposed model can simulate the production of pisco.

Purpose: Hereditary Breast and Ovarian Cancer (HBOC) syndrome is responsible for ~5–10% of all diagnosed breast and ovarian cancers. Breast cancer is the most common malignancy and the leading cause of cancer-related mortality among women in Latin America (LA). The main objective of this study was to develop a comprehensive understanding of the genomic epidemiology of HBOC throughout the establishment of The Latin American consortium for HBOC-LACAM, consisting of specialists from 5 countries in LA and the description of the genomic results from the first phase of the study.
