Los objetivos fueron determinar las características físicas y químicas de los frutos de la palta en sus variedades Fuerte y Hass, extracción de aceite mediante el método de prensado en frío y evaluación de su estabilidad oxidativa por el método rancimat. En la palta Fuerte, el cambio total de color del exocarpio fue de 9.4; textura final de mesocarpio 0.64 kg/cm2; materia seca hasta 32.58%; rendimiento de extracción de aceite 12.92%; contiene 77.426% de ácidos grasos monoinsaturados y 8.536% de ácidos grasos poliinsaturados; contiene 73.87% de Omega 9 y 8.00% de Omega 6; tiempos de inducción de 60.08, 26.40, 10.98 y 6.76 horas; para temperaturas de 90, 100, 110 y 120ºC, respectivamente y tiempo estimado de estabilidad a la oxidación de 3.5 años. En el presente trabajo de investigación se ha realizado la hidrólisis de almidón en un reactor de lecho fijo empacado con alfa amilasa inmovilizada con alginato de sodio y cloruro de calcio. Se ha trabajado en un reactor de vidrio de doble tubo; en su interior se ha cargado 100 pellets de la enzima inmovilizada, de 5 mm de diámetro promedio. Se ha realizado 12 experimentos que corresponden a un diseño factorial multinivel, siendo los factores independientes: la temperatura, T; el flujo de alimentación, F y la concentración inicial de almidón, CAo. Para el seguimiento de la hidrólisis se ha utilizado el método yodométrico, Fuwa-1954, y manteniendo el pH constante (pH = 7,02) con tampón fosfato. La biosorción es una alternativa más económica que los métodos convencionales debido a que los materiales utilizados como sorbentes son materiales orgánicos de desecho. As global copper demand surges, it's vital to conduct a thorough analysis of metal concentrations in the agricultural soils of mining districts. This is especially pertinent for the Andean region, where, in the face of clear soil degradation, there's a notable lack of in-depth research. This study is the first attempt to characterize variations in the concentration of 17 metals in the agricultural soils of Moquegua – a region with a long history of mining activity that contributes significantly to Peru's position as the world's second-largest producer of copper. Prickly pear (Opuntia ficus-indica L. Miller) is a natural source of antioxidant compounds that have gained significant attention due to their potential health benefits. This study aims to investigate the effectiveness of pressurized liquid extraction (PLE) and Ultrasound-Assisted Extraction (UAE), combined with water–ethanol mixtures from 0 to 60%, at moderate temperatures between 50 °C to 70 °C to improve the recovery of antioxidant compounds from red peel prickly pear. The recovery of these compounds was affected by solvent composition and temperature for both extraction techniques. Interestingly, the use of pure water at 70 °C during the PLE process allowed the recovery of high concentrations of antioxidant compounds (12.96 mg GAE/g dw, IC5O: 2.03 mg/mL, ORAC: 625 µmol TE/g dw). The expansion of copper mining on the hyper-arid pacific slope of Southern Peru has precipitated growing concern for scarce water resources in the region. Located in the headwaters of the Torata river, in the department of Moquegua, the Cuajone mine, owned by Southern Copper, provides a unique opportunity in a little-studied region to examine the relative impact of the landscape-scale mining on water resources in the region. Principal component and cluster analyses of the water chemistry data from 16 sites, collected over three seasons during 2017 and 2018, show distinct statistical groupings indicating that, above the settlement of Torata, water geochemistry is a function of chemical weathering processes acting upon underlying geological units, and confirming that the Cuajone mine does not significantly affect water quality in the Torata river.
