Solutions are needed to address both hunger and the promotion of healthy and sustainable diets. Quinoa, a nutritious and sustainable Andean grain, is a versatile option for creating new foods. Over the years, several technological advancements have been made to include quinoa in various food products. However, there is still a need for solid scientific evidence on the impact of quinoa on the product's acceptance. To address this scientific knowledge gap, this work aims to analyze the scientific literature over the last three decades regarding the sensory and hedonic impact of adding quinoa to food products. El presente proyecto se orienta a la producción y comercialización de Arepas en Universidad Nacional del Altiplano Puno; la AREPA, es una tortilla, elaborada a base de maíz y queso, revalorando las propiedades nutricionales del maíz, complementándolo con un derivado lácteo como el queso, siendo un producto 100% natural y libre de conservantes. Se desarrolló el plan de negocio en el cual la investigación de mercados ha demostrado que la cantidad de demanda para el consumo de éste producto es definitivamente muy alta; así también esta investigación ha mostrado que el producto presentó una gran aceptación por partes de nuestro mercado meta. As global copper demand surges, it's vital to conduct a thorough analysis of metal concentrations in the agricultural soils of mining districts. This is especially pertinent for the Andean region, where, in the face of clear soil degradation, there's a notable lack of in-depth research. This study is the first attempt to characterize variations in the concentration of 17 metals in the agricultural soils of Moquegua – a region with a long history of mining activity that contributes significantly to Peru's position as the world's second-largest producer of copper.
