Avocado cv. Hass consumption has expanded worldwide given its nutritional, sensory, and functional attributes. In this work, avocado fruit from two harvests was subjected to hydrothermal treatment (38 °C for 1 h) or left untreated (control) and then stored for 30 and 50 days in a controlled atmosphere (4 kPa O2 and 6 kPa CO2 at 7 °C) (HTCA and CA, respectively) with subsequent ripening at ~20 °C. The fruit was evaluated for primary and secondary metabolites at harvest, after storage, and after reaching edible ripeness. A decrease from harvest to edible ripeness in mannoheptulose and perseitol was observed while β-sitosterol, hydrophilic and lipophilic antioxidant activity (H-AOX, L-AOX), abscisic acid, and total phenolics (composed of p-coumaric and caffeic acids such as aglycones or their derivatives) increased. Background and objectives: Tarwi is a legume that grows in the Andean region of Peru. This grain is characterized by having a high protein content (similar to 42%). In order to generate added-value products from this resource, the possibility of obtaining tarwi protein hydrolyzates (TPH) with in vitro bioactive properties was evaluated using Alcalase, Neutrase, and Flavourzyme enzymes, acting alone or in combination for up to 240 min. The in vitro evaluated properties were as follows: antioxidant (ABTS assay), antidiabetic (alpha-amylase, alpha-glucosidase and dipeptidyl peptidase IV (DPP-IV) inhibition), and antihypertensive (angiotensin-converting enzyme-I (ACE) inhibition). The maximum conversion parameters of sucrose and fructooligosaccharides (FOS) from a clarified yacon extract (1% FOS) to fructose were optimized by using chemical and enzymatic hydrolysis. Chemical hydrolysis was performed using sulfuric and phosphoric acids and enzymatic hydrolysis with inulinase and invertase enzymes. Surface methodology response was employed for optimization hydrolysis. A Box-Behnken design, was used for chemical hydrolysis, where optimal conditions using sulfuric acid were: pH 1, temperature 88,4°C and time of 38,7 min reaching 9,11 g fructose/L extract while with phosphoric acids were: pH 1, temperature 89,9°C and time of 42,2 min obtaining 7,84 g fructose/L extract. Este trabajo tuvo como objetivo evaluar el perfil HPLC-PDA de los compuestos fenólicos, su contenido y capacidad antioxidante en los extractos de los hipocótilos de maca amarilla, roja y negra durante las etapas de pre-cosecha, cosecha y secado natural post-cosecha. De la pre-cosecha al secado natural post-cosecha, en los tres ecotipos, se observó un incremento significativo de los compuestos fenólicos totales y su capacidad antioxidante. En la cosecha, la maca roja presentó la mayor concentración de compuestos fenólicos. Los análisis HPLC-PDA revelaron la prevalencia de 11 compuestos fenólicos, pero con diferentes concentraciones en cada ecotipo y en cada etapa de estudio, seis derivados del flavanol (flavan-3-ol), cuatro derivados del ácido benzoico y un derivado del ácido o-cumárico. The high maize (Zea mays L.) diversity in Peru has been recognized worldwide, but the investigation focused on its integral health-relevant and bioactive characterization is limited. Therefore, this research aimed at studying the variability of the primary and the secondary (free and dietary fiber-bound phenolic, and carotenoid compounds) metabolites of three maize types (white, red, and orange) from the Peruvian Andean race Cabanita at different maturity stages (milk-S1, dough-S2, and mature-S3) using targeted and untargeted methods. In addition, their antioxidant potential, and α-amylase and α-glucosidase inhibitory activities relevant for hyperglycemia management were investigated using in vitro models.
