El objetivo del presente trabajo fue evaluar la calidad de la leche cruda en cuanto a sus propiedades fisicoquímicas, microbiológicas y toxicológicas, en siete cuencas representativas de la región Puno. Los resultados fueron comparados con los estándares establecidos en la Norma Técnica Peruana para leche y productos lácteos NTP 200.001-2003 y con la Norma Oficial Mexicana NOM-155-SCFI-2012 para los parámetros de proteína y lactosa en ausencia de parámetros peruanos. Para la caracterización fisicoquímica se determinó pH, acidez, densidad, contenido de grasa, proteína, lactosa, sólidos totales y sólidos no grasos; también se realizaron análisis microbiológicos de E. Coli y mesófilos. El objetivo del presente estudio es evaluar las condiciones físicas y químicas de las aguas superficiales derivadas de los deshielos del nevado Riticucho en la Rinconada- Puno, los cuales evidentemente son afectados por la actividad minera informal desarrollada en esa localidad. El trabajo evalúa el efecto de esta actividad en sedimentos y agua de las lagunas Lunar y Cumunni, las cuales fueron evaluadas en temporada seca y temporada de lluvias en 2018. El análisis físicoquímico incluyó: pH, conductividad, OD, DBO5 , DQO, dureza, cloruros y sólidos en suspensión. También incluyó metales (As, Cd, Cu, Fe, Hg, Ni, Pb y Zn) en agua y sedimentos. Apply the educational program Happy Children Without Anemia (HCWA) in children at a public school in Puno department, supplying a fortified vegetable product to reduce anemia levels and improve their parents´ knowledge and healthy practices. A pre-experimental study with pre and post-test was carried out. The study population was children of the public school of Yocará, community of the province of San Roman. Hemoglobin data was obtained from 44 school-age children, ranging from 6 to 12 years old, who received bread fortified with beans and quinoa flour for 120 days. In the same way, both parents and students participated in nutritional talks and workshops with topics related to iron deficiency. This study was performed to investigate the volatile compounds for the characteristic aroma in jabuticaba fruit distributed in southern and central regions of Brazil. The present work combines headspace solid phase microextraction (HS-SPME) and high resolution gas chromatography-mass spectrometry (GC-MS) techniques to identify and quantify the volatile compounds. The influence of different SPME fibers (CAR/PDMS and DVB/CAR/PDMS) in extraction of volatile compounds was evaluated. The effects of extraction temperature and salt concentration (NaCl) in the extraction medium were studied using the response surface methodology in order to achieve the highest extraction efficiency. The better extraction of volatile compounds was achieved by using a CAR/PDMS fiber and the optimum adsorption conditions were at 42 °C for 30 min and 5% NaCl concentration.
