In recent years, the consumption of beverages has increased; however, the excessive consumption of processed and packaged foods with a high sugar content is detrimental to human health as it has led to an increase in various metabolic diseases, which is why it is essential to introduce into the food chain new options of beverages enriched with fruit pulp, rich in polyphenolic compounds and antioxidants. This research sought to develop a functional beverage based on soybean juice and aguaymanto pulp sweetened with stevia, for which nine treatments were formulated consisting of 70, 80 and 90% soybean juice, 30, 20 and 10% aguaymanto pulp and 0.08, 0.10 and 0.12% stevia, and their physicochemical characteristics, sensory acceptability and bioactive composition were evaluated. The results showed that treatment 3 presented the highest sensory acceptability by the panelists with a score of 3.3...

In the late eighteenth and early nineteenth century, the authorities of Mexico City carried out a series of slaughters of so-called vagabond dogs (strays), which claimed the lives of 20,000 to 30,000 canines. The sacrifice of these animals was not well-received by certain sectors of society. This article argues that studying the material relationships established between dogs and plebian groups can partly help explain the reluctance demonstrated by the residents of Mexico City towards the slaughters. Its central argument is that plebian groups did not share the same view as colonial authorities of dogs. While authorities regarded dogs as a latent danger, plebian groups saw dogs as producers of a monetizable good: excreta. Some economic sectors, such as the medical marketplace and leather tanneries, had a high demand for dog excrement.

“The Part about the Crimes”, one of the five sections of Roberto Bolaño’s novel 2666, is the pretext to investigate on topics such as doubt and certainty, hand and industrial mechanization, corpses as real or spectral presences, or corpses as performatic elements, far from mimetic realism and novels of social protest. The specialized criticism only reads horror, fear, abjection, bodies as commodities and savage capitalism in this novel. On the contrary, I propose a reading that attempts to reconstruct a dialogue with the avant-garde and especially with the ready-mades by Marcel Duchamp.
